So, I did a bunch of reading on this during the 2020 brickclub.
Summary of mattresses c.1840:
Fabric exterior stuffed with straw, horsehair, wool, or (less commonly) flock, coconut fiber (coir), moss, chaff, sawdust, paper, see-grass, cornhusks, beech leaves, or sometimes cotton. Some of these materials only appear in children's mattresses. Metal coil mattresses are known, too.
Average weight of around 40 lbs. Minimum weight seems to be around 20lbs, with good mattresses are in the 70-80lb range.
Thickness of mattress depends on the material and density of packing: most of the references I found which gave a number were 3"-4" or 6"-8".
Usually used in groups: a tightly-packed straw paillasse functions like a box spring. Above it are generally one or two softer mattresses (horsehair and wool being common options).
French mattresses have a reputation (in English-language sources) of being soft and luxurious, and one mentions that they are usually stuffed with wool, which is replaced every year.
Waterbeds and air mattresses do exist (as cutting-edge medical tech).
