Stegasaucy Queso: My first real kitchen experiment since moving into our new place. I wanted to make a dip for some pretzel sticks I just bought from the bakery and ended up creating a new staple.⠀ ⠀ 1/2 cup of cooked sweet potato, roasted garlic cloves, full banana pepper with seeds, 3 tablespoons of red chili pepper sauce, 2 tablespoons of veggie broth, 1 tablespoon of nutritional yeast, 1/3 cup of vegan mayo, and a half bundle of cilantro. Add more or less to attain spice level and consistency desired. Blend it all up and serve chilled. ⠀ ⠀ With the same consistency as dairy-based queso, it is way healthier, tastes better, and steers clear from one of the largest environmental problems today: animal agriculture. This remains to be one of the leading factors in growing global greenhouse gas emissions, deforestation, and species endangerment & extinction. Not to mention the severely inhumane treatment of the animals involved. ⠀ ⠀ While it can be easy to eat green, it's incredibly easy to be wasteful and consume products that indirectly affect animals and environments across the globe. So much produce is sold in plastic bags. So many "vegan-friendly" products contain things like palm oil. ⠀ ⠀ Grass roots is how we can focus on turning small changes into big changes. Days of confinement on a beach resort in Punta Cana finally gave way to a drive through the countryside. It felt so good to jump on a bus with open windows and explore the valleys and mountains of the Dominican Republic. Being able to see what a country is actually like is so much more rewarding to me than being surrounded by other tourists, sitting on a beach all day, and gorging myself on all you can eat and drink buffet options. One year ago today I was in Punta Cana photographing a wedding. In both a persons own life and the general on goings of the world, it's incredibly easy to focus on the darkness without also trying to shed some light. Or to ignore the darkness all together in order to try and preserve what light there is in ones bubble. ⠀ ⠀ There will always be darkness, and it is up to each and every one of us to do our part in keeping a balance - preferably in favor of the light. Yes, we are responsible for ourselves. But we are also responsible for those around us, too. Those we know and those we don't.⠀ ⠀ I am so excited to begin my year with a trip I know will have a positive effect on things I care for and believe in. A trip I feel will enlighten me and pave the way for me to start doing more work I am fully passionate about. I hope in your own way, you can join or start something in life that makes you feel the same. ⠀ ⠀ I hope we can all do our part to help, inspire, and be humbled by others. I hope we can all collectively bring more light into the world and make a positive difference for ourselves, for each other, and all those to come.⠀ ⠀ With that, here's to a happy new year!
