I did a project today of making a four-course, michelin-esque dinner with a card suits theme for my husband using regular grocery store ingredients. Almost everything was made from scratch, excluding the bread and the dressing on the asparagus.
Course 1: 2 bite amuse bouche- pimiento cheese stuffed mushroom cap with pickled red onion and whole wheat toast with butternut squash goat cheese mousse and confit garlic
Course 2: Appetizer of citrus herb butter salmon with caramelized thyme red onion and puffed rice noodles
Course 3: Entree of roasted salmon with cacio e pepe scalloped potatoes, parlsey butter mushrooms, crispy tuille, and lightly dressed roasted asparagus
Course 4: Dessert of miniature vanilla cheesecake with candied black pepper walnuts and strawberry-basil jelly
Quick breakfast whipped up with some leftovers- toast with veggies cream cheese, smoked salmon, and garlic herb butter sauteed mushrooms with roasted potatoes on the side
Valentines dinner!
Wagyu steak seared on cast iron in garlic herb butter, mushrooms sauteed in garlic herb butter, and oven roasted red potatoes.
The whole thing came together in about half an hour
Valentines breakfast!
Potato pancakes with smoked salmon, sour cream, capers, black pepper, and dill.
I cheated the potato pancakes by making about 2 cups of instant mashed potatoes and letting them cool, then mixing in salt, pepper, parsley, 1 egg, and about 1/4 cup flour and then frying them in butter. Low and slow frying on medium-low heat is best, something I learned while running my potato cake food truck a while back.
The "Italian Elvis", as my husband calls it- Salami, peanut butter, and banana
We came to the conclusion that any sandwich with a spread + meat + bananas makes it an Elvis of some kind, and that an Italian Elvis was better with Nutella instead of peanut butter

Roasted brown butter sage Cornish hens, mashed red potatoes with gravy, stuffing, roasted asparagus, cranberry sauce, rolls, and sweet potato casserole
We finished it off with mini pecan pies made "I-40" style based on a pie from the Buttermilk Sky pie shops in East TN- aka, a pecan pie with chocolate chips and coconut added in.
Pastries from a stand in Eataly at the MGM grand in Las Vegas. They were fantastic, you can never put too much cream on a cream puff

We treated ourselves to Garden Party mocktails, escargot, and omelettes- the wild mushroom and blue crab specifically. Probably my favorite meal we had during that trip!

We got the strawberry milk tea (which was fantastic and had real strawberries in it), a pineapple lemonade (very refreshing but very sugary), and and Kuropi donut (super sweet but very soft and tasty, full of a green custard)
It was a lovely and really popular stop, but the wait was worth it
Meatballs with romesco risotto
Romesco is another underrated sauce; I made mine with tomato paste, roasted red peppers, walnuts, basil, black pepper, lemon juice, and parmesan. It made a sauce so creamy that I didn't even need to add dairy (beyond butter) to the risotto
