Sunday prep- couples mason jar salads. Two * three different salads. Prep was inefficient if not filled with love. 💗💖💕 Don't know what we like yet. And I'm not making six salads just to find out they all tastes like trash.
To be honest- I'm actually pretty excited for these salads. There's a sweet fruit kale salad with a maple lime dressing that I can barely wait for. A Mexican inspired salad and I forgot the avocados. And one with a peanut lime dressing and some random veggies from my fridge. My lab partner is ready to fuck with that dressing. Salads adapted from below:
Pack one of these 5 vegan mason jar salad recipes for a healthy lunch on-the-go! They're easy to assemble ahead of time & full of nutritious
Also made six pumpkin overnight oats jars. Lined up all the jars and moved them across the scale, one at a time, measuring the things I'm adding. Turns out my measuring cups are definitely off from the weight! But did I track any of those things? Absolutely not. But maybe next time.
Next prep is on Wednesday night. But I could start on Tuesday after the gym if I'm not too tired.
Reflection: Having prepped meals in my fridge thrills me. It's an investment in my health and my husband's health. It's a good example for my kiddo. And it's a kindness for my future self. I am grateful for the work that I've put in to believe that I deserve health and nourishing foods. For so long- I settled for crap food that has destroyed my body.
We had a busy weekend with two trips across town and multiple friend hangouts. I don't feel like I did much. It was soothing to cut up a cucumber from the farm (I have so much privilege) or dance around to nineties music will I cleaned dishes. The pace felt slow and right and full of joy. Maybe most preps won't be like this. But I'm grateful for today's.
Still reeling from vacation and hard work and family stuff. Spent time crying this morning instead of extended meal prepping.
Today's prep: cheese and meat sticks in a baggie. Salad and go bundle with extra chicken in my Greek salad and an extra coffee. Coffee was more half and half than coffee.
Observations: I feel better. Lab partner cheered me up and I can think/regulate the feelings again. Still got some healthier options locked in. Turns out that time spent crying was well spent.
Went out of town for a wedding this past weekend. Made boss, healthy snackle boxes for the flight. Brought extra fruit and veggies to support the trip.
Hotel fridge froze everything.
I did not ask the hotel to fix the fridge. We just ate out more.
