My latest batches of pear and cranberry cider are very good. Each started with juice that was sweetened a bit with dextrose (corn sugar) and fermented at 75 degrees for two weeks. Their final ABV is about 9.5%. Then the pear flavoring was added to the pear and 4 lbs of cranberries were puréed and added to the cranberry. Each had English tea added to enhance the tannins and a balance of citric, malic and lactic acidosis added for balance. Final PH was right about 3.5. Fermentation was not stopped and they both retain the natural yeasts and much was bottled in non-clear beer bottles with priming sugar to add carbonation. This is a cranberry apple cider. 6 gallons of apple juice in the primary with 4 lbs of cranberry added for the secondary and English tea added for tannins.
