Mother’s Day. On this day I am most thankful for my wonderful mother, who thought me all I know and always supports me. I made this most delicious Strawberry Cake for my mom on Mother’s Day. I celebrated by cooking a fresh veggie-filled meal with my husband and Mom. We made salmon with herbs, dijon, and onions, kale and sauteed leeks, roasted cauliflower with carrots, onions, garlic, and herbs, and fresh salad from the garden. After an evening promenade with our dog Barkley, we topped off the day with cake, whipped cream, and prosecco. A perfect end to a perfect day.

I love this beautiful earth. It provides incredible beauty, an abundance of resources, and wondrous and awe-inducing moments. I am appreciative for it all and hope that through my actions I am being kind in return. On a daily basis I practice using eco-friendly organic cleaning products and eco-friendly beauty products; growing my own fruits and vegetables (at home or at a community garden); shopping locally at farmers markets and restaurants that source local produce; recycling everything possible; and walking instead of driving.

Lost somewhere in Rub' al Khali  or The Empty Quarter with my two best friends after driving three hours from Dubai. It was incredible to be completely surrounded by desert sand seeing nothing on the horizon with the sun and heat beating down on us. The camels were slow and calm and we played beyonce on our phone and danced with our hands up the whole time. A moment I won’t soon forget. I appreciate the beautiful earth for providing this experience.  #handsup #lifeisbeautiful
