Just some quick tips on Getting Motivated!
Yet as a general rule it’s a whole lot easier to slap a health claim on a box of sugary cereal than on a raw potato or a carrot, with the perverse result that the most healthful foods in the supermarket sit there quietly in the produce section, silent as stroke victims, while a few aisles over in cereal the Cocoa Puffs and Lucky Charms are screaming their newfound “whole-grain goodness” to the rafters. Watch out for those health claims.

What I'm Loving: March
Salads!
I have never been a salad person, or rather I've been a casual salad consumer, but not a lover of this dish. I never felt full after only eating a salad and only those salads with chicken and/or croutons were mildly satisfying. However, recently I've discovered a recipe I love - it's literally addicting!
1 bag (approximately 4 cups) of spring mix
1 can of large black olives
1 cup of sliced red. yellow, and/or orange peppers
Feta, Pecorino Romano, or Parmesan cheese
Olive Oil
Red Wine Vinegar
Clean the spring mix and chop the peppers into long slices. Clean the olives and then combine all ingredients into a bowl. Add vinegar and olive oil as dressing and top with your choice (or combination) of cheeses.
You can also use red onions sliced in lieu of peppers and feel free to add any other toppings you love - mushrooms, cucumbers, etc. I've learned the most important thing about enjoying salads is a great dressing and toppings you love! Enjoy!
