The person remaining inside the vampire's system forever and tying their feelings together, the intimacy of a vampire tasting their lover's soul and embracing it within their being doesn't compare to lust or a mere sexual want, of course, but is just another factor to wanting all of the person.
The vampire ends up carrying every sin of the other person. And the other person ends up becoming the sin itself.
A mutual devotion so intense they end up giving a part of themselves to each other; giving up everything else as long as they stay together, even in death.
The idea of cannibalism altogether expresses the desire to devour and physical craving of a person, becoming so intense you end up longing for them to be so much closer to your being.
Digesting and getting everything you can in your organism. Every flaw, every virtue, every shame, every crime; accepting it into you and making it part of you, devouring identity and erasing every limit : wanting to fuse into one living being, involving sacrifice and ultimate devotion.
Slightly different to vampirism, bordering more to obsession and self-apropation of a person, wanting absolute control, it's the ultimate and last form from a want of claim and dominance.
Eating someone without their consent would be the equivalent of violating their emotional and sexual integrity, desserting and dissecting.

Emptying and draining out everything for your own whilst destroying the other person, the person's sorrow you yourself caused will forever be in you and never forgotten.
Cannibalism itself, is a form of superiority and preying over someone else, unlike vampirism, i'd say cannibalism is a metaphor for poisonous, harmful, unhealthy love that is very commonly misinterpreted; but anyhow, different perspectives are valid and these observations don't mean to make less of anyone's interpretation.
From a different perspective, i'd say the act of wanting to eat someone in order for them to stay with you forever, truly is romantic and beautiful, leaving aside every lustful feeling within it.
