Confetti Spaghetti Squash - Serves 8
1 Spaghetti squash, halved + scooped
6-8 Mini bell peppers, chopped
1 Green bell pepper, chopped
1/2 Red onion, finely chopped
1 Can Black beans, warmed on stove
1 Bunch cilantro, chopped
Handful cherry tomatoes, halved
1 Lime, rolled for squeezing
Roast or microwave spaghetti squash until soft. Brush with olive oil and roast at 400 degrees for 1 hour or microwave wrapped in saran wrap for 25 minutes per half.Â
Saute peppers, onions, and any other vegetables (zucchini or mushrooms would be +1) and throw on a little fajita seasoning.
Warm black beans on the stove.
When spaghetti squash is done, scrape out the spaghetti into a large bowl. Add sauteed vegetables, tomatoes, cilantro, and squeeze lime juice on top. Top each serving with black beans, salsa, and cheese if you prefer.
