Anyone have any tips for someone looking to gain speed in prep/service?

Time management is the basic part. 

It sounds obvious but some times newer people dont think about it.

Something takes 30 minutes to cook? Put it in the oven, do 3 10 minute jobs and then bam you’ve done 60 minutes worth of prep in half the time!

Got 3 prep jobs that require diced onions? Dice them all first before starting.

Practice Practice Practice, The more you do jobs the more efficiently you’ll complete them. E.g. You’ll stop needing to quickly go look at the recipe every 10 minutes and that adds up.

And lastly (the one I took the longest time to get better at) STAY TIDY, CLEAN AS YOU GO!!! dont try and do 5 jobs back to back without taking 2 minutes to tidy up and wipe down your section, if you let things get messy and disorganised, your mind will be too. Keep tidy and keep focused on the task you are working on.
