Firehouses literally don’t need the pole anymore because the reason they evolved into having the pole in the first place isn’t an issue anymore but they keep it because “fuck it if we’re going to a potentially life threatening situation might as well have some unrestrained workplace fun before we go”

They changed to poles from spiral staircases! Presumably it was a little difficult, a little dizzying, and a lot cramped for grown men to run down a tight spiral staircase from the living quarters down to the equipment rooms/garages, so they took out the staircase, saw the hole in the floor/ceiling, and decided a pole would do just fine.
As to why they had a spiral staircase instead of a regular one? Well, turns out that regular staircases are super easy for horses to walk up and then you just had horses hanging out in your bunk. And they had horses because at some point, engines didn’t exist but fire brigades still had a wagon of stuff to take to a scene!
and horses are why Dalmatians are associated with firehouses, they were kept to keep to run ahead of the wagon and clear the way, and also guard the horses on site from thieves. Dalmatians and horses get along very well
