I think my favourite of the traditional vampiric weaknesses – albeit not one which appears in every source – is "being exceptionally flammable". Don't get me wrong, the textual justifications which are offered for it in modern fiction are often fascinating: "fire is the embodiment of purification and vampires are the embodiment of corruption"; "fire is the light of civilisation and vampires are cursed forever to lurk beyond the campfire's circle" – these are all fun ideas to play with. However, this does not change the fact that your sexy vampire getting poked with a burning stick and immediately going up like a trashbag full of gasoline is in fact extremely funny.
("Maybe they're just dry" I assure you, dry corpses do not burn like that. Heck, paper doesn't burn like that, unless there's some sort of chemical accelerant involved. The supernatural explanations aren't overthinking it – there pretty much has to be something weird going on to account for why vampires with the classic fire weakness go whoomph like they're soaked in gasoline.)

Witches sink in water and vampires can't cross water, you are onto something here. And that something is a new means of clean energy created by sandwiching a vampire and witch together in an X shape inside a wheel which is placed in water and constantly spins as the witch tries to sink and the vampire is repelled. Effectively they are in perpetual rotation which can provide any number of uses for power generation via gearing whether it's milling grain or turning copper wire to create electricity. We could solve the energy crisis overnight.
