Fun with pickling!
Pickling veggies (or fruit) is very easy.
I started with a basic brine including:
1 1/3 cups white vinegar
1/3 cup water
1/3 cup sugar
2 tablespoons salt
I then added various amounts of:
Mustard seeds
Allspice (whole)
Black peppercorns (whole)
Dill
Rosemary
Oregano
Fennel seed
Garlic (chopped, fresh)
Chili flakes
Heat brine enough to dissolve salt and sugar. It should be room temp when you pour it over veggies.
My vegetables were:
Carrot
Yellow squash
Cucumber
Garlic cloves
Onion
Pepper
Green bean
Wait 48 hours and then it’s ready. I keep mine in the fridge but it should be shelf stable for up to two months. Tasty!!
