me and t are official today <333 going out for a friend's birthday tonight and i made red velvet cheesecake brownies for her and made the box super cute. so excited to go out and have a great time. i feel like for the last year i have had so few moments of feeling content so it's weird to have felt so good for a full month, but t just makes me really happy eeeee

all the things i made since fridayyy, i baked the cupcakes in advance and kept them in the freezer and got them out ready for my friend's birthday for saturday. the pink ones are vegan vanilla cupcakes with vanilla buttercream, and the brown ones are non-vegan chocolate cupcakes with chocolate buttercream. everyone at the party loved them, i was so happy watching them all eat them!!! on the saturday before the party i made these gooey cookies for a family thing i had the next day. made chocolate muffins today bc realised i'd bought the milk for it and it was about to go out of date so quickly did them, and then my nan dropped off a massive box of fruit so i used the strawberries to make strawberry jam (my first jammm, not hard at all just long) which i will use to make cherry (strawberry) bakewells yayyy

omg i'm gonna kms i got my sponges and cupcakes out of the freezer so they can defrost for me to decorate them tomorrow and the lid on the cupcakes was faulty so now i have to make a new batch RAHHHHH

omggggg you guys so like i had a few orders this month for baking and i just do it for friends not like proper, but by the time i get paid for my upcoming one people will have paid £90 for my bakes!!! 10 for the horse cupcakes i made, 5 for some cookies i made for a family friend, 25 for 24 cupcakes for a friend's birthday coming up, and FIFTY for a proper 8 inch birthday cake and 12 cupcakes. most of it goes on ingredients but it's amazing to have any go to me at all and it makes me feel sooooooo good about myself
hiii i have been so antsy and like mad lately, for like over a month i'm just mad all the time, so i'm baking a lot to try to get it out. on i think saturday i made gluten free vegan cupcakes for one part of an order i have, and then i made muffins while they were in the oven bc i was worried they weren't gonna work out lmao gluten free vegan is super difficult in baking bc baking isn't like cooking, it's very scientific and specific and if you do one thing slightly different your whole thing can be bad. but yeah they came out well, the texture is a little gummy but that's bc i couldn't use flour (so no gluten) or eggs so i had to use xantham gum as the bonding agent. they tasted good though thank god. i'm kind of thinking about trying a different recipe because i just really want them to be good.
then today i baked the sponges for a birthday cake which is the second part of the order, it's a raspberry cake and when you're adding anything to a sponge you need to toss it in flour so it doesn't all sink to the bottom, but i think the raspberries were a bit heavy so a lot of them ended up lower down. i'm gonna flip the cakes upside down when i assemble and call it a feature lmao. there will still be raspberries in every bite, so all is well. it'll be my first time whipping chocolate ganache and covering a cake with it, and my first time needing to do what's called a dam on my sponge because there's a raspberry filling i need to put between layers. the dam is done with stiff buttercream and is there to support the sponge on top and stop it weighing down on the less stable filling and causing it to all smush out of the edges. i think i've researched enough about it for it to go well, but i'm still nervous. but yeah lots of baking, making some cupcakes tomorrow or the day after for a different friend's birthday then cookies at the weekend for a friend's daughter. it's nice to be so busy.

you guyss my mum showed her friend who was a professional baker my flower cupcakes and she wants to order some from me! normally i price super low bc i sell to friends and even though i'm quite skilled i don't feel like i've been doing it long enough to price higher, but i think she might wanna pay me more for it because she's done it and she knows what goes into it which would be amazing bc i am so skint lmao. regardless of how much she pays though, the fact that an ex professional baker wants to buy my stuff is so flattering like she said they looked really professional and it's like eeee i'm really improving.
i'd love to go to pastry school tbh and learn everything properly with a teacher but i have me/cfs and i just would not be able to handle the physical and mental intensity. so i will keep learning at home. i put so much time into it you guys like i am always watching videos explaining techniques and showing ideas and recipes and i just got this book on how each ingredient works and what it does in the recipe so i can get better at substituting on the fly. i'd really love to be registered as a business, maybe set up by the end of the year? i drew a little logo idea the other day which was super cute. i need to think of a name for it. i know i won't get many orders but it would just be so nice to be able to officially do this for work, and i can do it from home and choose my work load. idk just excitinggg
