Decided to dress up and go see my friend perform in the Rocky Horror Picture show theatre play at the last minute. Never seen it before so I'm pretty excited.

Made a new batch of mason jar salads today. Put together a quick mango balsamic vinaigrette, topped with red and green peppers, cucumbers, chick peas, quinoa and kale :)

Here's a nice vegan dish that I made tonight. Pecan crusted tofu glazed with maple syrup with an orange wheel and Thai basil leaf on top, along with cooked quinoa, wild rice and golden raisins dressed with a homemade gastrique sauce and fresh kale cooked in olive oil, lemon juice, maple syrup and chili peppers. What I cooked tonight. Blackened pork tenderloin seasoned with smoked paprika and dressed with sauvignon blanc cream sauce, on top of garlic mashed potatoes, with a side of beans cooked in olive oil, maple syrup, lemon juice and chili peppers. Oh, and some parsley leaves to make it look pretty lol (at The Island Grill)
