Been tweaking my pain de Campagne technique since the beginning of quarantine, starting with a Dorie Greenspan and Julia Child recipe, then saving levain for the next batch. I learn something each time, allow myself the grace of mistakes, and never waste anything. This is my best loaf yet, sour, close but not too dense, crackling crust.
