So here’s the deal guys, @stitch-n-time has been an amazingly kind, generous and loving friend for probably close to 7-8 years now. She’s fed me, comforted me, even shown up to help me coordinate a work event on a Saturday morning for free just because she knew I didn’t have any other help. She worked with me at the museum and was my classmate at UCF. She greets everyone kindly, is the first to break down an awkward silence, and treats her friends like kings and queens.

She’s had a tough time here in Florida, and unfortunately that’s not uncommon in our housing and job market. She’s trying to raise an additional $1,000 with her own savings to afford the trip to travel to CO and see her daughter graduate high school. I definitely plan to help this Friday on pay day, but cannot help with the full amount. In addition to seeing her daughter graduate, Kristal also has an opportunity to meet about a potential job that i know full well could really change her and her partner’s lives for the better.

She’s a very sweet and very proud woman so I know she doesn’t like asking for help. But I’ve also seen her quietly tolling away on her Etsy trying to raise the money for this trip. I’m asking if there are some people feeling generous on tumblr tonight, please read her story on this donation page. She’s fought very hard to get this far. I’d be very happy if we could help her reach this opportunity she really deserves as well as to be part of her daughter’s big milestone of graduation.

My friend @stitch-n-time has 10 days left and she’s had a little unexpected boost in her campaign to try and get a ticket out to Arkansas and see her son graduate.

We're going to call this two meals and a cheat. For most of my meals I've been keeping it still lchf and doing well. But on occasion I am eating carbs. In the case of the pizza I was driving out for work and didn't get to heat up the lunch I brought to the office. But rather than beat myself up over it, I had lunch with my coworker at a local pizza place. I am still down a pound at least. Please excuse my ugly cauliflower pizza that fell apart. I didn't dry the cauliflower enough.

Checking In

So I’ll be honest. One big reason this blog has become a lot less active is because I’ve been off keto for a few weeks now.

I can eat breakfast lunch and dinner on a keto basis still for the most part. But I’ve had days that do include carbs and I know are keeping me out of ketosis.

One of the big reasons for this is that I’m undergoing some health stuff with my reproductive system. (Warning: girl talk ahead but also like be mature and deal with it, it’s my health.) I recently had 2 separate periods in a 3 week time frame. I’m fairly certain one was a reaction to restarting birth control, but neither were light on the bleeding and I did start to notice myself feeling weak, nauseas, and woozy during the second one. The possibility of anemia became a concern. So my priority was less eating for weight loss and more eating to eat and not feel woozy. I was also recently diagnosed with something auto immune related but I’m waiting on more bloodwork for specifics and am not really looking to talk openly about it yet. But it’s really knocked me on my ass this week especially.

Needless to say, keto is less of a priority right now. I can still keep my carbs lower for the most part and lost an additional 2.6 Ibs in February. In fact, a lot of the food they recommend I cut out I am eating less of while on keto anyway. I’m okay with where I am weight wise right now and accept that if I’m not truly doing 100% keto I’m still okay with it. I have a lot of stuff to figure out first before things will essentially even out. I’ll still reblog a lot of keto stuff because I’ve been recommended to stick to a primarily protein & veggie heavy diet now. But just updating that I’m not probably in 100% ketosis and doubt I will be able to be for quite some time.

OK so Breakfast looks small but it’s very filling. Eating ½ cup of almonds in the morning is no easy task. I usually eat macadamia nuts, but almonds are way cheaper and easier to buy in bulk. They can be raw or dry roasted, salted or not salted, it doesn’t make too much of a difference.

Eggs are always cheap - and filling.

I included a couple of options for lunch depending on what’s on sale. Be smart with the lunch meat choice. When in doubt, always chose smoked… honey has sugar. You can also go for more quality deli lunch meat depending on budget. Tuna is the same - get what you can, or opt for higher quality.

For dinner there are a lot of choices depending on what is on sale. As far as the butter is concerned, I know many tell you to only go for the Organic/Grass Fed/Kerry Gold stuff, but you could also get organic store brand butter, or… you know, just BUTTER! The same can be said about salad dressings - sometimes the only thing I have in the house is the kids’ basic Hidden Valley Ranch. 2tbsp of dressing is not going to kill you… just make sure you’re reading labels, checking carbs, and not buying anything that says “lite” or “fat free” and you’ll be fine.

DIY ELECTROLYTE DRINK: Don’t waste $$$ on sports drinks!

You’ll Need…

¼ tsp Morton Lite Salt

1-2 tbsp Lemon Juice

½ Packet of Sugar-Free Sweetener

16-20 oz Water
