It's been 7 weeks now I'm down 20.5lbs and everything feels wonderful!!
Just a quick check in
We've been doing keto for just one month now. I am down 18.6lbs. I see so many people down 20+ pounds (in their first month) and I get jealous. Bc believe me, I have the weight to lose! But then I remembered. 18lbs in a month is fan-fucking-tastic!!! I'm so excited. I go through my days eating food that I genuinely enjoy. I very rarely ever feel hungry and my clothes are fitting better. We have made some really good new recipes, using real, WHOLE foods.
The key to any diet, and anything you want in life is just one thing: patience
Yesterday we made an egg crust breakfast pizza. Basically an open-faced omelette. Cheese, ham, onions and peppers. Topped with Frank's red hot and avocado. My husband and I split this and it was not only yummy, but filling too!!

1/2 a waffle is plenty. The stats above are for a full.
Ingredients:
2 eggs
2oz cream cheese
2 tbs almond flour
1/2 tsp baking powder
1 tbs coconut oil.
Mix in mixer and then use waffle iron.
This recipe was topped with butter and cinnamon. But this would be good with some ham and cheese or other savory flavor, for sure!
When my favorite store has all goods
Ingredients:
1 head cauliflower
3 cloves garlic
5 tbsp olive oil
1 tbs lemon juice
Salt and pepper
1/2 avocado
1tbs chives (to top)
2 tbs pecans (to top)
1 cup spinach (to top).
#1 - Preheat oven to 425.
# 2 - cut cauliflower into florets and toss with two cut garlic cloves and 3 tbs olive oil. Drizzle a tiny lemon juice. Roasted 35-40 minutes, tossing occasionally.
#3 - dressing: remaining 2tbs olive oil. Remaining 1 clove garlic. Remaining lemon juice. Salt and pepper to taste.
#4 - when cauliflower is done, top with dressing, spinach, pecans, avocado and chives.
*this makes two servings (cals in pic based on just one of those servings)
1 egg
1 tbs heavy whipping cream (Aldi)
1/2 oz cheddar cheese
Served with:
2 slices bacon

So I am going to start the Keto Lifestyle change this coming week. I’ve been researching it for a bit now, and this weekend I’ve decided to plan and my husband and I are taking the leap next week!
I’m excited, and honestly this is my favorite video on KETO so far!
A part of being an adult is living with regret and not allowing it to consume you. The older you get, the more mistakes you’ve made, opportunities you’ve missed, people you’ve disappointed. And every day you have to remind yourself to be kind and forgiving of yourself. You accept and love the you from the past and understand that it’s all a part of the process. How I think people feel about me…since I gained all the weight back that I had lost last year.
Again this applies! I haven't blogged in over a year, in my defense I got a new phone and then couldn't remember the email I used to set this Tumblr blog up. I tried everything. Today, I woke up and out of the blue I remembered my email and password!! Seriously, I feel silly but I'm so excited to get blogging again!!
