My version of Chicken adobo (chicken stew) is a popular Filipino dish in the Philippines. Itโs easy peasy to cook. The dish gained popularity because of its delicious taste and ease in preparation.
With adobo, itโs a personal preference if you want it saucy or a bit dry. You can add onions if you want. If you only want thighs, or drumstick, breasts, or legs you can. You can use any chicken part when cooking Filipino chicken adobo.

Ingredients ๐๐๐๐๐๐๐๐๐๐๐๐๐ * 5 lbs chicken pieces ๐๐๐๐๐๐๐๐๐๐ * 3 pieces dried bay leaves
* 5 gloves garlic crushed ๐๐๐๐๐๐๐๐๐* 3 tablespoons cooking oil
* 1 teaspoon whole peppercorn
* 1 teaspoon chilli flakes ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ๐ถ* 1/2 cup water ๐ง๐ง๐ง๐ง๐ง๐ง๐ง๐ง๐ง๐ง๐ง *Optional hard boiled eggs
Instructions โฌ๏ธโฌ๏ธโฌ๏ธโฌ๏ธโฌ๏ธโฌ๏ธโฌ๏ธโฌ๏ธโฌ๏ธโฌ๏ธโฌ๏ธ *Marinate the chicken, soysauce, garlic, salt, pepper, and chilli flakes in a bowl. Mix well. Marinate it overnight.
* Heat a cooking pot. Pour cooking oil.
* When the oil is hot enough, pan-fry the marinated chicken for 2 minutes per side.
* Pour-in the remaining marinade, including garlic. Add water. Bring to a boil
* Add dried bay leaves and whole peppercorn. Simmer for 30 minutes or until the chicken gets tender .
* Put-in the sugar. Make sure to taste it and check if it needs more salt, pepper, and water. * Stir and cook for 10 minutes.
* Stir and turn the heat off. Serve hot with white warm rice. Enjoy.
