Standalone episodes provide a breather from the main Plot arc. It's a healthy break, especially if the Main story is intense. And it helps to break monotony without breaking canon. Also, "The French Mistake" happens to be one of the most well-loved episodes in SPN fandom (well, that, and the musical.)

Production wise, standalones could be written as a cost-cutting measure so that the "big" episodes get more money.

Best case scenario: they help develop story "legs" for a new plot arc.
