Shilaās Guide to Wine: Part v (A)
Previous chapter. This will be a 10-part series, covering all the basics and some intermediate-advanced aspects of viticulture and Ånology. For context: I grew up on my familyās vineyard and have been learning winemaking methods for as long as I can remember. Iām excited to share some of my knowledge here, and make wine more accessible for everyone.
Wine Styles & Varieties
If youāve been following this guide for a while, youāll likely have a solid grasp of the theory and method behind winemaking around the world. This chapter is intended to kick off a perhaps more āusefulā part of the guide, in that itās going to share information upon which youāll likely draw far more often and which may well take you far further than an in-depth knowledge of the vintage process. In this chapter, weāre going to cover the principal wine styles and grape varieties, the ones upon which youāre most likely to stumble in the wine list of any bar or restaurant.
The Worldās Principal Grape Varieties
The following grape varieties are often called āinternational varietiesā, as today, theyāre grown all over the world regardless of their country of origin. Together, they form an enormous proportion of wine grapes cultivated worldwide, and wines produced from these varieties are destined to be forever staples on any wine list.
This list does not, of course, in any way encompass the enormous range of grape varieties planted across the world, nor does it suggest that these āinternationalā varieties are superior to other regional varieties. Itās simply a list of the most popular and most widely-cultivated grapes; if you would like to know more about regional grape varieties, feel free to go back to the previous two installments of this guide, where I mentioned many different grape varieties that are characteristic of each major global wine region.
Cabernet Sauvignon
Cabernet Sauvignon is the worldās most beloved wine grape, grown in almost every wine-producing country and making up a huge proportion of wine produced annually, whether alone or blended with other varieties. It produces a typically full-bodied, rich red wine with robust tannins and intense aromas of cassis and liquorice, and is often considered to be a comparatively āseriousā wine; one with complex secondary flavour notes which emerge after a period of cellaring, as long as several decades.
Generally speaking, Cabernet Sauvignon is produced in two different and distinctive styles: the Old World style, an archetypal Bordeaux claret and perhaps what first springs to mind at the thought of a classic French red wine, with an emphasis on its natural woody tannins and tart blackcurrant notesāand the New World style, where the warmer climates and adventurous vintners have fostered a bold, weighty red wine with notes of roasted coffee and crisp green pepper.
Pinot Noir
The delicately floral Pinot Noir, long beloved throughout its native Europe, has been quickly gaining traction worldwide and is now carefully cultivated as far afield as New Zealand. Pinot Noir, as a notoriously finicky variety, is difficult for a vintner to get right, but with the right touch it can be divine. Its perfumed and elegant nature has also led to its status as a key Champagne grape, but alone, itās a typically light-bodied red wine, with fragile and aromatic notes of cherries and violets whilst young. Pinot Noir ages gracefully, growing fragrant and gamey with careful cellaring.
Pinot Noir demands milder climates, thriving in both the Old and New World. In the context of the Old World, itās a distinctly silky, aromatic wine, produced primarily in Burgundy and Germany as a softly herbal ode to the natural scents of the forest, emphasising both wild fruits and fine woods. The New World, typically, chases the fruit flavours in Pinot Noir, producing wines reminiscent of fresh berries and discarding the complex, almost medicinal aromas of the Old World.
Syrah
A.K.A. āShirazā in the context of the New World. Syrah, considered to be one of the great noble grape varieties, produces some of the most tannic and full-bodied red wines in the world. Wines produced from Syrah are typically bold and inky, with unmistakable aromas of dark, ripe fruits and a spicy character that develops into a truffle-like flavour with age. Syrah is a robust grape and its wines can stand up to and indeed flourish with decades of cellaring.
Syrahās true homeland can be traced back to the RhĆ“ne region of France, where the grape is typically blended with many others (the most famous blend being GSM, or Grenache-Syrah-MourvĆØdre). Old World vintners work with Syrahās bold nature to produce an elegantly dark, tannic wine with rich, spicy aromas of plum and leather. The New World, however, has made Syrah its own, even granting it a new name; as Australiaās signature grape variety, Syrah thrives beneath the relentless sun and heat of the climate Down Under, allowed to stand alone as an intensely rich and fruity wine, often leaning towards notes of dark chocolate or black pepper, with almost limitless ageing potential.
Merlot
Merlot is often unfairly disregarded by Ånologists as a mere blending grape, one that pales in comparison to its bolder cousins, but that couldnāt be further from the truth. Merlot is enjoyed worldwide both in blends and alone, playing a role that spans table wine all the way through to some of the worldās most valuable vintages. Itās perhaps a crowd-pleaser of a wine, with its medium-bodied nature and softly rounded texture, and often features aromas of soft fruits and gentle spices. Depending on the blend and vintage, some Merlots can be drunk young, but most benefit from a little cellaring, with many bottles holding up for just as many decades as a Cabernet Sauvignon.
Merlot is the most widely-cultivated grape variety in its native Bordeaux, where it typically plays a role in claret blends and is prized for its fruity, friendly character. Notably, itās a majority grape in the best wines of Saint-Ćmilion and Pomerol, where vintners praise its ability to produce deeply complex and age-worthy bottles, which fetch a small fortune on the international market. In the New World, meanwhile, Merlot is more often drunk unblended (although Australia pioneered the wildly popular Merlot-Cabernet Sauvignon blend), with the warmer climes cultivating wines with rich, often spicy aromas of baked figs and chocolate.
Sauvignon Blanc
Today, Sauvignon Blanc is arguably the most popular white wine in the world, with its aromatic character beloved by vintners and drinkers alike. Its character blooms differently across the globe, being strongly dependent on climate, but wines produced from Sauvignon Blanc are generally medium-bodied and fragrant, with fruity notes ranging from tart citrus to sweet and perfumed tropical fruit.
In the Old World, Sauvignon Blanc is prized for its crisp fragrance and fresh acidity, and is typically used to produce dry, aromatic wines. Sauvignon Blanc cultivated in the cooler climes of the Loire Valley often features sharp aromas of cut grass and citrus, with an earthy minerality; some Old World vintners utilise winemaking methods such as oak barrel ageing and malolactic fermentation to produce a smoother, richer wine more reminiscent of New World stylesāwhere the grapeās tropical notes are carefully extracted to produce vibrantly pungent and boldly fruity white wines, most often associated with New Zealandās Marlborough region.
Chardonnay
Chardonnay is perhaps the worldās most iconic white grape variety, made famous by its historic role in Champagne production, and then infamous by its overly buttery New World interpretations in the 1990s. The Chardonnay grape in and of itself is relatively unremarkable, producing wines with a medium body and neutral flavours faintly reminiscent of tart green apples, but itās this neutrality for which the grape is most prized; Chardonnay lends itself beautifully to so many different winemaking methods, gaining complexity and distinctively layered flavours, depending on the vintnerās style and approach.
Old World vintners appreciate Chardonnayās versatile nature, using it to produce wines both as crisply mineral as a Chablis, and as richly buttery as a Meursault. Oak ageing in the Old World tends to emphasise soft vanilla or yeasty toast aromas, whereas New World vintners are known to chase the sweet, toffee-like flavours from the same method, making use of the warm weather to extract nuances of tropical fruit from the grape. That said, some present-day New World vintners are moving away from the bold Chardonnays of the past, choosing instead to cultivate in cooler regions to more closely study the subtle nuances of the grape.

do you know anything about supplements for weight loss?
I donāt know much, I just listen to my friends and I make little notes of the supplements that theyāve taken to help with weight loss and help keep weight off. Iām not too experienced with some of the supplements Iāve listed and Iād recommend doing some of your own research before you add any supplements to your daily routine just to make sure that they wonāt mess you up.

photo inspiration for Hinge, please?
Letās see what I can find.
I did a little bit of looking just to see what I could find and I decided to go with a classic, all of the photos that Iāve used are from @/sydneyjharper on Instagram and I would highly recommend following her page, she is absolutely drop dead gorgeous and her feed is so nice to scroll through, the aesthetic she has going on is so nice, and she has a lot of really great makeup and hair looks. Iām going to keep this very simple and just work with her photos from one post but this is just a little bit of very basic inspiration and I think it would be so easy to go out and put your own little spin on Sydneyās pics.
The Basic Six Photos.
Your Hinge profile should have six photos and there is an option for a video but I donāt think thatās necessary in most cases. I will admit that I had a boomerang on my profile for a hot second but then I took it down as I thought that it wasnāt going to be much help in the long run. I do have a swimsuit photo on my profile but it is tasteful and I think it works well and fits in with the rest of my photos, I will say that if youāre going to do a swimsuit photo on your profile, you should keep it sort of modest because men screenshot and youāll get all of the weird messages from creeps who want your body. I would change outfits and Iād switch up your hair and makeup because each photo should be different but I still think that these pics are some amazing examples.
The Half Body.
The first photo on your Hinge profile, the photo that greets all of your visitors, should be a lovely half body shot. Your makeup and hair should be done, you should be wearing something that you love and look good in, and your hands should be up and maybe brushing your hair behind your ear or something (thatās what Iām doing in my first photo). This is your first impression and you want it to be good, you want to look like the image of yourself you have in your head, and you want to be projecting happiness. One of the most important compliments Iāve heard about my first pic is that I look happy and healthy in it and thatās what I want people to think when they see that first photo of me and I want them to scroll down and continue reading my profile.
The Look Behind. ļæ¼
I absolutely love this photo and I think it gives off the best vibes, like honestly, this photo is immaculate. This photo gives off a slightly mysterious vibe and itās one of those photos where the subject obviously looks like sheās asking you to ask her for more, and I love that you can see the length of Sydneyās back and her shoulders. You obviously donāt need to be a model and you donāt need to be so put together but I think that this is just a lovely photo and a striking pose, thereās something so mysterious and feminine about it, and I love a classic look back at it pose. I do have a photo like this on my profile and Iām at my favourite museum, in front of my favourite painting, looking back over my shoulder and using my eyes and smile to ask whoever is looking at that specific pic whether they like the painting or not.
The Full Body.
Absolutely every profile needs a full body photo, men like to look at a woman and see that theyāre not being āfatfishedā and half body photos are kind of vague, you could weigh anything below the cut off of the photo. I also think that including a full body photo gives you an out, there will be men who will like your profile and then ask to see a full body pic and having one on your profile gives you the opportunity to say āI have a full body pic on my profile!ā and cut them off from having any more photos of you. Iām wearing my favourite little black dress, high heeled Amina Muaddi sandals, and I have my favourite purse slung over my shoulder in my photo and I think I look great, Iāve had a lot of really sweet compliments on my full body pic and I would highly recommend having a really good full body pic. You donāt need to do too much, it can be nice and very simple, but you do need to have at least one on your profile just to weed out men and show your body off.
The Soft Smile.
Iām going to list off four classic photos here because I believe that your other two photos should be wild cards but the soft smile is an essential, you need to have one photo where youāre smiling and youāre obviously having a nice time. Most of the photos on my profile have that classic broody face that I usually do but I decided to go all out with my last photo pic and just smile like how Iād smile if I was around my friends or my loved ones and thatās the photo that most of my matches like and then message me about to see if Iāll match them back. I love to see photos where women are happy, thereās nothing better than seeing a woman happy and your profile is one of those places where you want people to see you then and think that youāre filled with joy, youāre looking forward to things, and you love experiencing life. One of the most important photos on your profile is going to be the soft smile and this isnāt a picture to skip over.

I feel like you smell heavenly. Please give us some tips to smell gooood beyond just mainstream perfumes. Like where do you apply? How much? What else should I do? Am I showering wrong??? LMAOO š
Thank you love, I do š¤£ā„ļø.
Well, to be honest smelling good is an art, like legit its a lifestyle ššš. The first thing that I suggest is checking your home scent, donāt ever let your home smell like food for too long, open the windows, clear out the air, clean often, and then you can focus on candles, incense, diffusers, etc. The way your house smells lingers on you, it follows you everywhere so its an important part of your signature scent.
Then comes the body, it all starts in the shower. Personally I have a shower gel to clean my body, and a second one to make my body fragrant. The first one is usually Dr Bronners, it removes body odor like no other, and its natural ; the second varies depending on what type of scent im going for that day, if its gourmand, Iāll use a vanilla scented shower gel, if its floral, Iāll also choose accordingly. I always use an exfoliating cloth, koreans use them, in Africa as well its very common. I use the one from The Body shop, that thing will remove every speck of dirt and dead cells for real.
After that, (not every day but around 3-4 times a week) I use a scented body scrub, I have one that targets body imperfections and hyperpigmentation (its the Acure brightening body scrub), and others that I like just for the way they smell š. When I get out of the shower I immediately put on lotion, again depending on the scent that im going for Iāll choose accordingly, currently I love the Kiehlās body soufflĆ©. After that I apply a body oil, and then my humrahs (traditional smoked perfumes), they are between water and oil, so I apply it on my wrists, my neck, my arms, behind my knees, and just below my belly button. Once that dries off Iāll spray a body mist.
When it comes to getting dressed : I have a special place for my undies/bras, and I always keep that place scented, I either put scented sachets or literally just spray perfume in there (be careful to not put it directly on your undies as it can cause irritation).
For my clothes as Ive explained I smoke them with incense, and to be honest I light incense a lot in my closet and in my home in general so everything smells good in there š. There are different categories of bakhoor (incense), if that day im going for a gourmand type of scent, Iāll light Farce (its a bakhoor made from sea shells smoked and infused with different oils), or chadian sandalwood for example.
After aaall of that, I finally spray my perfume š¤£, and for that I have tons, it will really depend on my mood. I spray it alllll over, probably too much but hey idc š.
Adding on to this : donāt forget to thoroughly scrub and clean your ears, nails, and if you can scrub your scalp at least once a month!
When it comes to oral hygiene, aside from brushing twice a day, start tongue scraping, oil pulling (coconut oil, itās anti-fungal), rinse your mouth and floss after every meal, and use cloves, neem, or myrrh (theyāre good to keep bad breath at bay).
And for feminine hygiene use unscented wet wipes instead of toilet paper, if you can or if you have one of those water features near your toilet clean yourself with water, its even better. Eat plenty of fruits (passionfruit, grapes, oranges, cranberries) drink water, herbal infusions, make sure your gut health is good, and if you want to, try yoni steaming once a month or every two weeks (donāt do it while youāre on your periods).
hairstyle inspo?
Beauty tips for ladies who don't meet the beauty standard? I don't want to sound like I'm putting myself down, and I know the general advice is confidence, but what are some practical tips? I don't fit the beauty standard or have "the body shape" ( I'm also overweight no matter how hard I exercise and cannot control my eating habits), so I feel stuck. Even when I get my hair done or do my makeup, I still fall short. I LOVE your blogs btw.
Hi Lovely, This is a great question. I put some practical tips below but I want to first affirm that there really is no such thing as a finite "beauty standard". Each culture, society, and individual is different. And regarding body shape, I personally have been both underweight and overweight in the past and neither times has my success been inhibited. But anyway, here are my practical tips:
Dress for your body type: First, figure out what kind of proportions you have, then look up ways to accentuate them! I personally have a very narrow body and once I began dressing with that in mind, I found myself looking MUCH better.
Get a color analysis done: This can be a game-changer. You don't have to pay hundreds for one either, I've gotten great analyses done free online. Dressing and picking a hair/makeup color range that suits your undertones can level up your look dramatically.
Get your clothes tailored when possible: Wearing clothes that actually fit is soooo important and the difference it can make is huge. I know tailoring can be quite pricey, so even if it's just on a few clothing items per year, its worth it.
Make sure your hairstyle is complementing your face shape: I'd suggest going to a professional stylist and having them assess your face shape and give you suggestions on which hairstyle would suit you best.
Make sure your eyebrows match your face shape: This can completely transform your look for the better. Before understanding this, my eyebrows were looking crazy and I still cringe at the thought of me stepping out with them.
Whiten your teeth: There are a BUNCH of homemade teeth whiteners you can make, and there are also a ton of inexpensive whiteners online. But having pearly whites will give you this inexplicable glow that will lift and brighten your face.
Learn how to do makeup that accentuates your features: One thing I've learned is that t's really not about how "nice" your makeup is, it's about how much it accentuates the best in your face.
Drink a ton of water: Not only will you feel better, but your skin tone and texture will likely improve, and your body will naturally release excess bloating.
Consider saying affirmations: This may sound kind of silly but hear me out. I had this employer once that everyone knew at my job to be the most beautiful woman they'd ever seen. She was jaw-droppingly, traffic-stoppingly beautiful. One day, my coworkers and I decided to ask what her secret was, and she simply said "every time I look in a mirror, I tell myself I'm beautiful". So you better believe I've been doing that since and you better believe I've never looked better. So give it a try! You have NOTHING to lose. The subconscious mind is extremely powerful. Just sayin.
That's it, Anon! Start with these, but not without remembering that YOU ARE ENOUGH. As you are.
And be sure to follow up if you'd like more tips in the future :)
Lovingly.
Elle

Best resources to learn about cyrptocurrency?
Hi Anon,
There are a ton of really great resources online to help get your feet wet in cryptocurrency. Here are some of the resources I've used:
1. Skill Incubator's 8 Week Cryptocurrency Trading & Investing Bootcamp:
I took this course last winter/spring and it helped me learn nearly everything I know now. Though it's not cheap, I saw it as an investment because I was going to be interning in a markets-based role at a large investment bank that summer and wanted to be well versed. It's incredibly insightful and while it's pretty high commitment, you really do come out of it a virtual expert on crypto.
2. Coinbase Learn
This is a great website for beginners because there are articles explaining everything, including: NFT's, ETH, Volatility, Blockchain, etc. It really spells things out for you and I return to it every now and again to make sure my basic knowledge stays relevant.
3. Coin Bureau
This is THE Youtube channel for learning crypto and with a new video published every day it's impossible to not learn fast.
4. Barron's Daily
This newsletter is a little secret that almost all the Wall Street investors I know swear by. While it's not crypto-specific, it's still a great resource for those interested in stocks. Through Barron's, you can learn about tech, commodities, alternative investments, bonds, etc. I try to read three articles per day to keep up with global affairs and improve my investing knowledge.
*Bonus: A good mentor!
I do have to say that a lot of my knowledge has come directly from people I've connected with. My boyfriend is a relative cryptocurrency genius and every day he gives me a crypto lesson. I have a mentor from my internship last summer who's a sales trader and he sends me articles and tips every few days which helps tremendously. Without these resources, I'd be miles behind where I am now. So get a good mentor or two if you can to help you out!

Elle

Eating fucking breakfast - Bagels, cereal, smoothie or just a banana anything to fill your tummy up with food for your meds or vitamins! Treat your body as if you were a toddler!
Smelling good - Super hard to get into the shower sometimes, and I know how comfy your bed is but it needs to happen mama. Dry Shampoo and baby wipes if youāre in a pinch
SKIN CARE - Even iām trying to keep up with this one, and donāt forget sunscreen! I can hear your pores crying for help!!
Complete hygiene routine - this is one of those where it varies from person to person. Ex: brushing teeth 2x a day, Complete showers (exfoliating, hair mask, the full routine) not just quick body showers anymore. Whatever works for you!
Screen time - whether itās TikTok, Tumblr, Instagram you need to stay off of it babe, even 30 minutes make a HUGE difference. When ur in public and have anxiety thatās completely fine but try to find something that stimulates your mind like books, articles, podcasts!! Maybe like mine, āYour Go-To Bitchā available anywhere you listen to podcasts! ;>Ā
Deadlines -Ā TBH anything that you havenāt gotten done! Even if they donāt have a deadline, letās all get our shit together!, ADHD laundry piles, taking out the trash, deadlines for work all of the above! Letās ease our minds a little more. Donāt forget to go at your own pace.
Deep cleaning - This is another one that will vary from person to person but one thing i advise is CLEAN YOUR FUCKING ELECTRONICS!! Your phone, AirPods, laptop etc! Just please do it!!!
Make a DEEP WORK playlist - is there that one music genre or couple of songs that make you feel and be productive? Create a playlist that keeps you on your grind and get some shit done!
Go to therapy - this one might be a little harder because of the U.S. healthcare system but there are plenty of free resources online.Ā
Spend time with loved ones -Ā No seriously, real loved ones! Family may not your first chance, mine definitely isnāt but hanging out with people that make you feel like your floating does wonders which bring me to another point
Communication - Tell people how you really are feeling, I know it might feel like youāre a burden or annoying but youāre not! Talk/rant about your shitty day at work and if they seem annoyed or burdened by you FUCK THEM!!! Your feelings are valid and you deserve to be heard.Ā (REVISON: I donāt mean emotionally unloading on some one without their permission, I mean bad friends who roll their eyes, gaslight you into thinking that itās just your mental illness, and switch up on you every Tuesday . Just people who donāt want to see you winning babe!!!)
Recreate a Nostalgic Meal - Now Iām not saying you have to have a whole ratatouille moment over your dinner but make/recreate something that brings you instant peace, your inner child might miss it more than you think babe.
Donāt forget your worth babe! - I know how hard it is, I used to always look at posts like this and roll my eyes but I hate to admit it but it helps! Donāt forget that you are that fucking bitch and keep your head held up HIGH!
xoxoxo

Tips that have helped me with my depression.
Disclamier: These are things that have helped meĀ personally stay busy but happy after an attempt. Take what you need and leave what you donāt bb <3
āJust do itā mentality - Trust me the last thing I want to do is chores and letās face it simple hygiene stuff like brushing your teeth, showering etc. However, since my recent hospitalization, I have forced myself to get back into a routine and back to human civilization. So if I donāt want to wash the dishes? Annalee, fuck it and just do it! Laundry? Annalee, fuck it and just do it! Fake it till you make it right?? It saves my mind at the end of the day.
CleaningĀ - I hate it so say it but itās true, a clean space is a clear mind. Start small! Bedside table, washing your bedsheets, clearing your bathroom counter. Small steps and go at your own pace! Each task is a step to a cleaner and more organized space.
Therapy - personally I have a therapist which I highly recommend but thanks to terrible healthcare in the U.S itās out of grasp for others. Now this one may not be for everybody, depending on the circumstances. But bb its time; therapy, shadow work, self reflection, even healing you inner child is a start. Ex: Going for ice cream and eating it at a park was a great start for me and my inner child. There are almost plenty of resources for free therapy, most depend on your location. Please approach that cautiously and safelyĀ
Meals - Being in the behavioral hospital was overwhelming but the thing iām surprised it helped me with is recognizing my hunger cues. Most of us are not breakfast people, and I am definitely not one but itās what has been keeping me going; and by going I mean out of bed (even if I go to bed right after iām done) Please eat bb, you deserve it.
Finding a hobby - Most people might have this one down and other may not but find something that makes you happy even if youāre not good at it. Mine is plants, iāve killed a coupleĀ a lot along the way but spending time on them brings me true joy. Find that spark again
Self Isolation -Ā Living with BPD has been a challenge when it comes to me isolating myself, so iāve said fuck it and started making plans with friends and itās been working?? Sure there were some cancelations but some real connections made non the less. Say yes to the friend that you always cancel on! I know itās hard but itās like a work out, you feel so great afterwards! (Iād take this with a grain of salt because I know how hard it is to be around certain friends. Triggers, snide comments etc)
NO FRAUDS - In the words of Mrs. Minaj.Ā I donāt need no, frauds. I donāt need no, drama when you call. I donāt need no, fake. Coming from someone who just let go of her FAVORITE PERSON (bpd term?) recently I know itās fucking hard to let go but I needed it and have been feeling so much better without the dead weight. If someone has come to your mind after reading this chances are you need to let them go bb!!
Delete the playlists babe! - Delete the Mistki, delete Marvinās Room by Drake, delete godspeed by Frank, delete any songs that you usually cry in the car to. Trust me this isnāt the mania talking, just delete the sad/heartbreak playlists
If youāve completed all of this and feel like itās way too much, I completely understand and by all means go at your own pace and LISTEN TO YOUR BODY!! Personally all of these have been keeping me out of bed and not self-loathing 24/7. Maybe itās mania, maybe itās not but itās been keeping me going for more than 6 weeks?Ā xoxox
