Lemon Curd Experiment
Made some lemon curd in small jars, but the base grew too much in them. It tasted good anyway. I have to try again ...

3. Once it has taken some thickness take it out of the stove put it in a bowl. It will look like this:
4. Wait until is cold, you can beat the butter meanwhile.
5. Once the mix is cold, you can add the butter (once whipped) to it:

Stuffed cupcakes
There are a lot of ways of making stuffed cupcakes. This is the one I use when the stuffing can lose the flavour if put in the oven ... it also makes me feel like Indiana Jones in The Temple of Doom (taking out the heart of the cupcakes ;o)).
Ingredients:
The cupcakes
Something to use as stuffing (I used quince)
Directions:
1. Use a core remover like this one:
2. Strongly and carefully, vertically stab the top of the cupcake with the core remover. Do not push it to the cupcake bottom or it will surely break. 3. Rotate the core remover and take it out. This procedure is quite easy.
4. Push the device’s button and discard the core.
5. Once you have removed the core of all cupcakes. Put the stuffing in a syringe or another device (I use decopen) that can be heated in the microwave (and heat it a little bit). You can also pre-heat the stuffing before putting in the syringe.
6. Fill the cupcake core using the device of your choosing.
Basic cupcake recipe
Ingredients:
2 + 1/2 cups of flour
2 teaspoons of baking powder
3/4 cups of sugar
a pinch of salt
1 cup of milk
2/3 cups of vegetable oil
1 egg
vanilla flavoured sugar (or anis, ...)
you can add: bits of chocolate, fruits, ...
Directions:
1. Mix the flour and the baking powder in a bowl (I always sift the flour before mixing anything). Then add the sugar and mix and the vanilla flavoured sugar here (if you choose some kind of flavoured liquid, is better to mix it in the following step with the rest of the liquid ingredients).
2. In another bowl mix the milk, the vegetable oil, the salt and the beat egg.
3. Make a hole in the flour and pour the liquid ingredients that you just mixed.
4. Mix thoroughly until smooth. It should look like:
5. You can add now chocolate/fruit bits.
6. Put the mix in a pitcher and prepare the baking tray.
7. Pour the mix into the capsules until they are filled up to 3/4 (approx).
8. Insert the tray in the preheated oven at 180C and bake for 10 minutes. Reduce temperature to 160C and bake for another 10 minutes.

Bica amantecada
This is the recipe for my favourite galician dessert. One of the two recipes that are made in my village in Ourense.
Ingredients:
Bread dough:
200 gr. bread flour
115 ml. warm water.
5 grams Fresh baker's yeast
The final thing:
The result of the above mix
250 gr. flour (best pastry)
Pinch of salt.
6 eggs
400 gr. + 60 (for the coverage) gr sugar.
Cinnamon
Zest of half a lemon
250 gr. cow butter
Direcctions:
Bread dough:
1. Dissolve the yeast into the watter and add the flour mixing with your hand. The result should be like this:
2. Cover the boul with transparent film and put the mix in the fridge over night. The result should be like this:
3. Take the bread dough out of the fridge and let it warm.
4. Cover a square mold with baking paper.
5. Melt the butter slowly using the microwave.
6. Mix the melted butter with the sugar.
7. Now we can mix the eggs, one at a time. Do not add the next egg until the previous one is completely mixed.
8. Add the lemon zest. The mis should look like this by now:
9. And now the most difficult thing: add the bread dough in small chunks and mix. The mixture has to be completely homogeneous (if the bread dough is too cold it won’t mix easily)
10. Pour the mix into the mold. If it doesn't expand to the edges of the mould use a silicone spatula.
11. Mix the remaining sugar and a teaspoon of cinnamon:
11. Cover the dought with it, it should look like this:
12. Bake it in a preheated oven at 180º for 45 minutes.
Try not to eat the whole thing!!

A Long Story
Hi Guys, I am still alive… I am kinda lucky to be. I attempted Suicide on December 31st 2015. I overdosed on Sleeping Pills and was talking to Trevor (LGBT Suicide Hotline) while doing so. After 24 Pills 1,300mg of diphenhydramine, I went into a panic attack and immediately regretted what I had just done. I had 128 Sleeping Pills, 6,400mg of diphenhydramine, ready to take. I would have died if I took it all.
I was starting to feel the effects and began to worry. I told the Trevor guy my address and he sent emergency team. After 20 minutes the police came and extracted me from my home and sent me to the nearest hospital. I have very little memory of my first day in the hospital.
I found out from Erika that the police had left my door unlocked and I was robbed because of that.
