Peanut Butter & Jelly Cupcakes A favorite recipe from Jemma Cupcake
This is another recipe I made for a 4 year-old's birthday party (from Jemma's YouTube channel). I have to say that everyone loved them! They were pretty easy to make, and tasted just like a PB&J sammich. Win-win if you ask me.

One of my favorite channels on YouTube is Jemma Cupcake's. She is completely unselfish with her recipes, which is great for me because she lives all the way out in the U.K. This was a very rich cake, and it had my eyes popping out of my head the entire time! Look her up and/or buy her book.

These are red velvet and cream cheese cupcakes made from scratch for my dad's birthday/Christmas eve.

Hello Kitty birthday cake for that friend who loves her so! First, I pre-sketched HK's face and flowers on a large piece of paper, and cut out the silhouette. Using the silhouette/stencil, I placed it on top of the baked cake (13"x9") and cut into it following the line. The cake was super moist resulting in jagged cut lines. To "clean" it up, I used black icing along the sides and piped a black outline around the entire cake. After this, I referenced HK's face on Google to draw in the flowers, her eyes, and outlined her nose. Then, I mixed some colors and piped them within the black outlines. Lastly, I took six toothpicks and laid them on her cheeks to form whiskers. Carefully, I piped black lines on top of them, and then Voila! Hello Kitty face cake.
I wanted to focus on cake decorating, so I used simple chocolate cake and vanilla icing recipes.
