I personally think the "undoing of their past" was done really well and with clear signals of it happening in past few episodes.

Sunjae's line about fate just being what a person chooses over & over again fits so well into the plot.

Their fate cannot change because he would never choose different. Never not lay his life for her.

Not unless that choice was taken away from by the one person who would leap through time and space for him. Im Sol, who erased her own existence from his life to keep him safe.

Sol~ah who does not care if he falls for her, writes sonaki for her because she's lived every day since his death - dreaming, praying- that she can truly be his gift from the sky and make him live his life.

This is the cost of their happiness.

A past sacrificed for a future.

Its so beautifully painful because no it doesnt erase the story but only solidifies it. Their love for each other that both creates & defies fate.

Their past is not lost, it has given way to the future because as fate would have it - it wasnt their time yet.
