Mercurial Knight as a Mandalorian fits so well, especially making him be like Din Djarin where he is very loyal to his clan, to his creed, to his beliefs. This is the way.

Crimson Coral as a jedi knight as well because I think she'd be like Obi-Wan where she fights with a defensive style like him. She is a jedi master and her padawans would be her own sisters.

(White Pearl was her last and Crimson dared not have another padawan under her ever again after Pearl went to the dark side)

No matter the AU MercurialCoral is still doomed since jedis and mandalorians are sworn enemies. But it really depends on which part in time is this, before or after the empire formed.
