Mushroom Ricotta Tarts Yield : 24 tarts 24 ( Nasoya) Wantoon Wrappers 4 oz Goat Cheese 8 oz Ricotta Cheese 4 oz white onion -minced 3 Cloves Garlic - minced 1 lb mushrooms - thinly sliced Spectrum Canola Oil Spray 1 tsp dried thyme 2 Tbs. fresh parsley- chopped Sea salt/black pepper to taste 2 Tbs. Olive Oil Heat a large sauté pan over medium high heat with olive oil, then add mushrooms, garlic, onion, thyme, and parsley. Saute until just soft and aromatic. Remove from heat and place mixture in a large mixing bowl. Allow 20 minutes for the mixture to cool. Add ricotta and goat cheese to mixing bowl and combine all ingredients. Season with sea salt and black pepper to taste and set aside. Spray a small muffin tin with canola oil spray and place a wanton wrapper in each space making sure that they touch the bottom of the pan. Scoop an even amount of mushroom/ricotta mixture into each wanton. Spray any exposed wanton with canola oil spray and twist each closed. Set oven to 350 and bake for approximately 20-25 minutes until crispy and golden brown. Remove from muffin tin and enjoy!
