Enjoy the soft, flowery scent of honeysuckle with this delicious ice cream recipe from Lucky Peach. A cool treat that's perfect for a hot day!
Ingredients: 2 cups honeysuckle flowers. 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 4 large egg yolks.
Instructions: Take honeysuckle flowers apart and throw away the stems and leaves. Heavy cream, whole milk, and 1/2 cup of sugar should all be mixed together in a saucepan. On medium heat, stir the mixture until the sugar is gone and it's warm. Honeysuckle flowers should be added to the warm mix. Take it out of the heat after 30 minutes and strain out the flowers. To make the egg yolks lighter, mix the last 1/4 cup of sugar with them in a different bowl. Slowly add the warm cream mixture to the egg yolk mixture while whisking all the time. Put the mixture back into the saucepan. Cook over low heat, stirring all the time, until it gets a little thicker and coats the back of a spoon. Take it off the heat and let it cool down all the way. Put the mixture in the fridge for at least four hours or overnight to cool it down. Follow the directions that came with the ice cream maker to churn the chilled mixture. Put ice cream that has been churned into a container and freeze it until it is firm.
