It is so true that understand the environment and your flour is the trick for a good loaf. I’m so happy with this one, happy with the rise and the crust, the flavour and the exceptional flavou, I used: 80% strong organic white flour from @dovesfarm 20% organic Wholemeal #timilia 10% mix of grains and seeds pre soaked overnight 2% #himalayanpinksalt 66% H20 ________________________

2h autolyse 6h bulk fermentation 30 minutes bench rest with 1st shape Final shape and 10h cold fermentation at 7degree Celsius

Apart from the usual cinnamon roll I'm also going ham on my sourdough starter. She's never been happier.

Today was ok i guess. Got the most pressing things done:

☆ made another sourdough bread. Every week, baby.

☆ my java assignement is finally compiling!!

☆ scanned the sketches I made yesterday

I also emptied my phone of nearly 4k photos. It's nice to start over.

quarantine is giving me an emotional swirly where, in between the dunking, the mean girl that lives inside my head relentlessly taunts me with how four years ago i‘d swear i was going to be a preeminent scholar and world-renowned archaeologist but somewhere along the road i just became ma ingalls instead 🌾
