Fritter fest.
Made this Old-Fashioned Chocolate Fudge yesterday. Brilliant!
Vintage vanilla fudge from BBC Good Food. Making this right now!
Fragrant, hearty and simple to prepare, this satisfying soup recipe is an easy midweek winter warmer. It originates from the northern Himalayan region of Nepal. Although right now here in Melbourne we're slap bang in the middle of a 35+ degrees heatwave with humidity levels off the chart playing havoc with my curly hair that refuses to be straightened so perhaps I'd go for a nice cool gazpacho instead and save this recipe for winter.
Lazy bread for a lazy gal
Thanks SBS for a month of dinners.
Tonight's dinner?
These crackers by Nicole Joy are the perfect 3pm snack topped with some avocado and tomato.
These tahini and wholegrain mustard crackers are paleo friendly and contain no tree nuts.
"This variation on the classic ‘icebox’ cookie – where the dough is refrigerated before baking – was popularised by American pastry chef and cookbook author Maida Heatter, dubbed ‘Queen of Desserts’. They’re an addictive combination of sweet, salty and spicy all in the one mouthful."
I’m not sure why these cookies are “Mexican” - perhaps it’s the cayenne pepper? Anyhow, what’s in a name?! These are delicious!
""Find out why meat empanadas are Argentina's favourite street food, with this delicious and easy-to-achieve recipe.
Once you’ve had empanadas there’s no going back!
"There are two types of dough, depending on whether the empanada is baked or fried. While making the empanada dough is very easy, you still need a bit of practice to acquire the technique of folding them. After sealing the empanada, you can give it whatever look you like, based on the traditional decorations or not. Here are some repulgue used by clasico argentino."
"Empanadas are a popular snack throughout South America. They can be found baked or deep-fried and stuffed with a variety of sweet or savoury fillings. This version of these little hand-held pies originates from the Mendoza province in the mid-west of Argentina, bordering Chile. They are filled with spiced meat, egg and olives and are then baked in the oven or on the barbecue."
I love empanadas! This is just one recipe - there are hundreds. If you are short on time, just buy the pastry from the supermarket.

These irresistible sandwich cookies are a sweet taste of Argentina.
Oopsies is another good low-carb bread option. It’s a “bread” without carbs and can be eaten in a variety of ways.
Delicious cauliflower pancakes that you can enjoy by themselves or with homemade mayonnaise or a hearty salad, or serve as a side dish, just like hash browns.
Fewer ingredients than the previous recipe, but just as yummy!
And get a dose of veggies this morning!
