i keep seeing complaints that even though Sinners is a widely beloved movie on Tumblr and fandom as a whole, that there is comparatively few fic on AO3 about it
people, including black people, were harassed over ships such as Sammie/Remmick or Moorecest and called klansmen or racists who think black people are as prone as white hillbillies to being "incestuous degenerates"
focusing on Mary (and, to a lesser extent, Grace) in any form was racist because "Annie and Pearline are right there, why do you hate dark-skinned black women HMMMM?"
fic characterization of the Moores, Sammie, Annie, Pearline, or any other black supporting or minor characters and the usage of perfectly popular fandom/ship/smut tropes could get under scrutiny, and really, when has anyone ever wanted to write something that might be torn apart by a crowd of overzealous critics?
it's the Finnpoe situation all over again. in this fandom climate, it's hardly a surprise that the only people who end up staying are the Kylux shippers or Remmick readerfic writers
I haven't seen it, so I don't know what other filmmaking factors might be in play, but it's pretty normal for one-off movies to have very little fic fandom. It's true that the exceptions do tend to follow certain patterns, but I think that's pretty different from the implied situation that many white dude characters get fandom thing X while everybody else gets crickets. Actually, almost everybody gets crickets.
On AO3's movies index page right now, there are 13,113 tags showing (including all the various metatags and versions of the same fandom). Here's a chart of how many of those tags have how many works:
945 works for Sinners is honestly pretty good.
Out of the 282 fandom tags with a thousand works or more, if I take out all the billion MCU/DCEU/Star Wars/etc. franchise tags and the stuff like South Park that does technically have a movie, I'm left with a list that is still mostly franchises, like James Bond or Disney princesses.
It's honestly hard to have anything left if I exclude franchises. Here's a sampling of the bigger movie fandom tags with the MCU, a bunch of Disney, etc. taken out. It's a bit arbitrary, but this gets the list down to a scrollable size.

Notice how many of these are still franchises. Notice how little fic there is for mega-popular films like The Matrix. (Granted, some of that is because it hasn't made it onto AO3, but I still don't remember those films having a huge fic fandom.)
Some of these are popular in other languages and look to me like they're the latest adaptation of something with a preexisting fandom.
Some of them are Netflix movies. Sure, you can say "Wharrgarbl! Kpop demon hunters is popular because Asian!" all you want, but it's something we didn't have to drag our asses to the theater to see, and it's luring people with the promise of a sequel they will also be able to watch in their pajamas.
It's a well-known trait of fic fandoms that serialized media with just enough down time between canon entries and plenty of either plot holes or unexplored areas of canon tend to grow the big fic fandoms. Most canons still don't, but the ones that are going to often follow this pattern.
Looking at the list above, let's hunt for some one-off movies that showed in the theater, darker canons, or ones that deal with serious social issues. As an off-the-cuff short list, I'd pick:

Having not seen Sinners, I can't say exactly how dark or quippy or whatever it is, but this short list seems like some of the more relevant AO3 movie fandoms based on lots of factors.
Much of this list is still way fluffier than Sinners sounds, and some of it is old enough that I don't know if there were lots of fics somewhere else. I'll note that Titanic only has a couple thousand on FFN though.
Titanic—Titanic!—has a small fic fandom.
So we've got the freak outlier Inception, but we also have stylish, fun vampire films like The Lost Boys that really aren't generating that much fic fandom. We have recent films that I know people liked, like D&D: HAT that are also not generating much more fic than Sinners.
I'm sure people were assholes and that this had a chilling effect, but even without that, this is just what a movie fandom looks like. The only reason we think differently is that instead of asking any sane question, we keep on and keep on asking:
Why wasn't this movie a one-in-a-million outlier like Inception?
