In my mind I have two explanations for piglins attacking you if you don’t have golden armor. The lore one and the funny one.
The lore one:when a piglin commits enough crimes to warrant getting kicked out of the horde(I.e. murder, theft, or refusal to work in hunts despite being in good condition) they are stripped of their gold, so when a player approaches not wearing gold, they instantly assume that this strange unknown figure is approaching them and also they did something to warrant getting booted from the horde they were from, so they attack.
The funny one:
Pliglin:*sees player approaching* NAW THAT GUY POOR!!! JUMP ‘EM!!!(sounds of confused player getting shot by crossbows)
my idea is that, as gold seems to have some purifying properties (used to cure zombification, seems to be used in totem of undying), it could also be used to stave off zombification, or perhaps is just thought to, hence why theyd choose to wear/wield it over stronger materials and why theyd eat it (golden carrots)
piglins all, the the very LEAST, have that golden buckle on, but players dont necessarily, so maybe youre seen as possibly bringing whatever causes the undeath with you, whether that be a disease or some corrupting otherworldly force.

I tend to go for a more cultural angle when it comes to things like this, but this actually seems like a pretty neat observation.
lots of culture is built on facts and beliefs of the time! i mean clearly, its not foolproof, and zombified piglins still have some gold on them too, but you could definitely see it as a sort of religious observance too if you like

i really like games that feel like they have their very own ecosystem!! rainworld is a really good showing of mobs interacting with each other and doing their own thing to live their lives, and i think that that would be really cool to add into minecraft!
not just with animals either, i think that villagers, illagers, and witches should all feel like they have their own lives and that they do things when youre not around. right now, all they really do is wander around. wolves chase skeletons and sheep eat grass, but we could have so much more than that!!
imagine if they all had their own schedules and preferences that were made clear by their behavior! ill start this example off with the chicken. what better way to start off with than...

fandom.com has been a massive problem for wikis for years - their sites are overloaded with ads and popups, and the articles are often unreadable. minecraft wiki is now hosted by weird gloop, which also runs the runescape and runescape old school wikis!
