The Harp Emblem
The harp, which serves as the Guinness emblem, is based on a famous 14th century Irish harp known as the "O'Neill" or "Brian Boru" harp which is now preserved in the Library of Trinity College Dublin. The harp device has been synonymous with Guinness since 1862 when it was used as a symbol on the first bottle label for GUINNESS®. It was registered as a Guinness company trademark in 1876. It is because of the harp trademark that Guinness named its first lager 'Harp' in 1960.

Happy birthday cookies! The chocolate-chip cookie celebrated its seventy-fifth birthday this year. While we have always known who, where, and when of the chocolate-chip cookie’s origins, how and why have remained somewhat obscure. A set of often-repeated creation myths have grown up around the country’s favorite baked good. The most frequently reproduced story is that Wakefield unexpectedly ran out of nuts for a regular ice-cream cookie recipe and, in desperation, replaced them with chunks chopped out of a bar of bittersweet chocolate. (A variation of this tale has Wakefield substituting the chips after running out of bakers’ chocolate.) Another even more unlikely story posits that the vibrations from an industrial mixer caused chocolate stored on a shelf in the Toll House kitchen to fall into a vat of cookie dough as it was being mixed.
I have decided to find the most moist and heavenly good chocolate muffin recipe. Do you know the feeling when you desperately want something sweet? All this endeavour started one evening (almost night) when I had a pretty large sweet tooth, and I was pretty sure about what kind of sweet tooth it was. Ingredients 115 g unsalted butter 60g dark chocolate, chopped 42 g unsweetened cocoa powder 105 g all-purpose flour 1/2 tsp baking soda 3/4 tsp baking powder 2 large eggs 145 g sugar 1 tsp vanilla extract 1/2 tsp salt 120ml sour cream 1 Preheat oven to 175C. Line muffin tin with muffin liners. 2 In a heatproof bowl mix the butter, chocolate and cocoa powder. Set the bowl over a saucepan of simmering water. Heat the mixture until the chocolate and butter are melting. Whisk until fully combined. Set aside to cool, just warm to touch. 3 Mix the flour with the baking powder and baking soda. 4 Beat the eggs in another bowl, add the sugar vanilla and salt and whisk until creamy and fully incorporated. Add the chocolate mixture and stir well. Gradually add flour mixture, one third at a time. Whisk in sour cream until combined and the mixture is thick and creamy. 5 Spoon the batter into the prepared muffin tin. Bake about 18-20 minutes, until the skewer inserted in to the centre of the muffin comes out completely clean. 6 Cool muffins on wire rack until cool enough to handle. Carefully lift each muffin from the tin and set on wire rack to cool completely.

Today I’m doing a little off-topic, just to keep high your attention. I’m talking about an amazing picture I took yesterday. It was evening, at the sunset, and in any case I was near the Huntsman Inn, so it is not off-topic too much.

WHAT’S THE BEST PUB IN GALWAY
Now, I am not an expert on Galway Pubs, but we did research and interviews for the ones we couldn't try. Galway pubs are as colourful and varied as the characters that frequent them. In the choice we also consider the price, as the offers for groups. But what makes Irish pubs different is the traditional culture, so here we come. You are sure to catch a traditional Irish music session in progress in Taaffes at any time of the day or night. The bar's location in the middle of the main shopping thoroughfare ensures no need for directions. Taaffes is a great traditional pub in the centre of the city, with live sessions at 5pm and 9pm each day. Food served until 2pm each day.
I feel a need to mention another pub, for many reason. The first is that it saved my evening twice in a week, when I was constricted to stay in the other side of the river because of family restrictions. The second is the polite stuff, which was so kind with us in many situations. Just to say, I experienced this yesterday, when the bas was closed so we couldn’t have the beer we were looking for. Unexpected as a bolt from the blue, the bartender opened secretely (from the boss) the bar only for us, he walked silently just and poured our pints.
Situated just 5 minutes’ drive from Galway’s busy city centre, The Huntsman Inn offers free Wi-Fi and free private parking. In the mornings, The Huntsman serves an extensive breakfast menu, which includes full Irish breakfast.

WHAT’S IRELAND FAMOUS FOR?
Ireland is well known for both its traditions and its wonderful pub culture. The unique thing about Irish beer habits is that the most popular type of beer is stout, whereas all other European markets prefer lagers or ales. The most famous stout, of course, is Guinness.
if you stop at a pub in Ireland and ask for a pint, the bartender will invariably bring you a Guinness. This is because of the centrality built by Guinness in the Irish culture. It is not only the national drink, it is also one of Ireland’s leading exports. Guinness has a distinctive flavour, dark color and creamy foam, famous all around the world; actually it isn't black, like many people think, but actually a deep ruby color, that you can see by holding your pint up to the light.
A proper pint of Guinness should have a thick head of foam on top. To get this right, the bartender does the “two-part-pour”: he pours the draft in the glass with 45 degrees of angle, lets it sits for three or four minutes, then tops it off for serving.
Smithwicks was hands down the best beer I had while in Ireland. Actually caught me off guard. I highly recommend this ale. I tasted it and have been absolutely involved with it ever since. We have tried all these beers for this review (yes it’s true) and the smithwicks is our final choice.
