How we sometimes feel when we eat dinner with family members we haven’t seen in ages.
Procrastibake recipes
Chocolate brownie recipe:
So I used a recipe from 'Keep it Vegan' by Aine Carlin, but I changed a few things to fit the contents of my cupboard :)
Ingredients:
250g plain flour
1 teaspoon baking powder
A pinch of salt
1 banana
230g caster sugar
1/2 tablespoon of vanilla extract
100g Bourneville chocolate
1 tablespoon of Bourneville cocoa powder
1 tablespoon golden syrup
4 tablespoons vegan margarine (personally, I used Vitalite)
Method:
Sieve the flour, baking powder, cocoa powder and salt into a mixing bowl
In another bowl, mash the banana, then add the sugar and vanilla extract and mix
Break up the chocolate and place it in a mug, along with the margarine and golden syrup. Place the mug into a pan of just boiled water
When the chocolate mix is fully melted, add it to the banana mix and mix well
Make an indent into the dry ingredients and pour in the banana/chocolate mix and fold in together. (At this point I added a little more golden syrup and vanilla extract, for luck)
Pour into a tin and bake in the oven at 180 Celcius for 25 minutes

Chocolate chip cookie recipe:
This is one I found on the internet, but did the same as before (fitting the recipe to my cupboard needs). Link to original, here: http://www.atiliay.com/best-chewy-chocolate-chip-cookies-ever/
Ingredients:
55ml of almond milk
1 teaspoon of vanilla extract
100g of Bournville chocolate
225g vegan margarine
100g caster sugar
100g demerara sugar
310g plain flour
A pinch of salt
1 teaspoon of bicarbonate of soda
Methods:
Mix the marg and sugars together in a mixing bowl
Add the milk and vanilla extract and mix well
Add the salt and bicarb, then sieve in the flour and mix
Add in the chocolate chips and mix them in too (at this point I also added in a splash of milk to soften the consistency a little)
Place tablespoon sized dollops of the mixture onto a baking tray covered in greaseproof paper.
Bake at 180 Celcius for around 10 minutes, or untill golden

Procrastibaking
So instead of doing uni work, I decided to bake... procrastibake :)
I made choc chip cookies and chocolate brownies (as you can see from the photo). Both vegan and both super yummy :3
The chocolate brownie has banana in it, and I was a little sceptical about it because I'm not usually a fan of banana in baked goods, but it's not that powerful and actually works really well.
The chocolate chip cookies weren't quite as good as non-vegan ones I've made in the past, but for a first try they were pretty good. They probably needed a bit more margarine (vegan, of course), and probably some more vanilla extract.

I'm Lucy, final year BSc Zoology student, part time shop worker and full time vegan.
And that's what my Tumblr will be all about. From vegan food, to vegan beauty products, I will be trying it all. I only turned vegan about a month ago, so I'm still learning and trying new things, but through this process we can learn together :)
