Mono has a great opportunity to receive the Vegfest UK Award for Best Veggie Restaurant for an unprecedented 2nd year in a row!

So doing some one off fun nights in Mono involving the food and jams from our resident DJs has been on the cards for a while, Rusty studds from Monorail music and myself got together this spicy little number and it happened last night,and it went pretty well! Definitely going to be trying to do more one offs like this with different inspired menus and themes.

So here to feast your eyes upon is the first in hopefully many music and food collaboration nights at Mono ....

HAPPY VEGAN DAY Y'ALL!!!

So MONO put on a special Caribbean influenced set menu for mega cheap and it pretty much booked out before we had even started serving.

For yr eyes to feast on here is the menu we prepared......

Starter- Macaroni pie with crispy cheese and breadcrumb topping,served with garlic roasted string beans and scotch bonnet ketchup.

Main- Curried seitan with okra,potato,peppers,tomatoes served with rice and peas, fried plantain,coleslaw and salad.

Dessert- Sweet potato, rum and raisin pudding with a coconut,lime and pineapple coulis.           

Ill be honest with you, it was pretty banging and the kitchen got treated to a wee portion of what was left over with a beer at the end of the night.

Day 19 VEGAN MOFO 2013

So after about a week of letting Jack and Mariella deal with our new sourdough starter i finally accepted the responsibility of our new kitchen baby...CASPER. 

I took the wee black tub off the shelf and peeked in to see a small but active amount of stinky rhubarb and rye starter that the other two had  handled and fed every day for over a week. I do feel bad that i shirked responsibility but i'm making up for it now, i lovingly measured and fed Casper and gave him a stir then after an hour i took 5 spoonfuls out and mixed him with a batch of pizza dough, now i don't know if anyone else has tried making their own sourdough, its not an easy thing to do, luckily i have 6 other babysitter when i'm not about to tend to ours and hopefully he will grow up to make many many more delicious pizza bases because i'm telling you, when that pizza came out the oven... holy sh*t....it tasted better than any store pizza or delivery pizza i've ever had, we have been testing out regular bases with different flour but this is it, the definitive MONO PIZZA base..... 

We will hopefully have these on next week but still testing out toppings, this is one thats staying.....

Garlic mushroom, sautéed spinach, capers and cream cheese, a red wine, balsamic, oregano and tomato pizza sauce spread very lightly over a SOURDOUGH base. The edge has been brushed with olive oil,mixed herbs and sea salt and theres a garlic and lemon dip to dip dip that beautiful crust in. I swear ill never buy Dominos again.

Day (Friday the13th) VEGANMOFO

Sometimes even Chefs have breakfast and i pretty much eat this all year round…its definitely better when my Greek lassie makes it when I’m in Athens but a rainy Scottish morning solo breakfast of yoghurt, figs, quinoa flakes and maple syrup will do post gym/pre work.

Day 10 VEGANMOFO 2013

Today felt like a day to flame grill some veg, lots of lovely fresh veg. And one of my favourite styles of food apart from Greek to cook flame grill is Persian food.

Flame grilling veg is so simple and it only relies on its own natural sweetness and maybe some lemon juice and a bit of chopped fresh herbs. It is one of the most delicious ways you can cook, and this dish is one I've had many variations of but all have a couple of things in common, the grilling of the veg and the rice thats cooked in yoghurt and saffron with a good helping of butter and sumac. This sold out in an hour today and there were a few sad faces on the staff that missed out on it for their dinner. So, if you have a griddle pan at home or if your lucky enough to have a gas hob its pretty easy to make this and you really should, just remember to make enough so theres no sad faces when its been eaten up.

Seitan Koobideh with Persian rice, flame grilled peppers, portobellos, aubergines, courgettes, red onion and beef tomato served with tomato salad and drizzled with a yoghurt, sumac, mint and parsley sauce.

Sometimes i wonder what cooks and chefs kitchens at home are like, i love seeing pictures of musicians and artist in their own spaces where they like to hang out, and sometimes in the Weekend papers food monthly or maybe a blog or magazine you get to have a peek around folks kitchens,anyway i realised tonight i always hang out in my kitchen,even when i'm not cooking. In work the staff always like to come in and hang about on their breaks and chat or just get away from the business of the bar.

Basically i think kitchens are the best place in a house or workplace.....and at parties too, you'll always find the best room is the kitchen.

Day 9 VEGANMOFO 2013

Its a double deep fried kinna day...plus i was a bit lazy over the weekend and didn't get round to posting stuff :( 

I've been perfecting the TO-FISH AND CHIPS recipe and finally think i've got it down.

To-fish and chips with minted mushy peas, tartar sauce with gherkins and capers, double fried red rooster chips, and a big ole squeeze of lemon. ( The To-fish is wrapped in nori sheets and fried in Williams brothers beer batter with cider vinegar  and mustard seeds)

Honestly this is one of the staffs favourite dishes and mine also, the batter and the tartar together Offt, and the mushy peas, oh my god, i love mushy peas!!!!

Day 9 VEGANMOFO 2013

Since having to think a little bit more about the food i'm posting up here i've realised i'm pretty obsessed with the types of food i used to see in movies when i was a kid, especially American fast food.

Growing up in Scotland we only had fish and chips or Chinese/Indian takeaways and its strange as right now theres this obsession with Soul food, Pulled pork, Brisket,BBQ foods, Hot dogs, and pretty much anything else folk can buy cheaply on the street in other countries, don't get me wrong i love it but there still seems to be a lack of Vegan options.

Well, i guess what i'm trying to get across here is expect a lot of food like that in these posts as i'm not ashamed, i love junk food!!! and you cant get anymore junk than a deep fried corn dog!!!! If us Scots know how to do one thing right its deep fry food....i know you have heard of deep fried mars bars, we are famous for it.

Day 6 VEGANMOFO 2013

Nothings better on a cold day than a warm pudding. We have been trying out a few different ideas and Anne made this little beauty…

• Orange and cardamom sponge with vanilla ice cream and mandarin coulis.

Day 6 VEGAN MOFO 2013 

Its not against the rules to post every second day is it? hope not :) coz y'know its not always possible to sit down with a nice cuppa Dear Green coffee, put some Slayer or Fleetwood Mac on and potter away on my laptop, just saying y'all.

Hopefully a double post will make up for it, here we go from the top...

Jack that works in the kitchen stayed in Egypt for a while and sampled lots of delicious street food including Kosheri, this was one that i think a famous and very talented chef called otto something or other might have in one of his books, thats cool though as theres enough variations to share it around, it is really easy to make and doesn't cost much so this is a brilliant dish for a cheap meal night or maybe if you have a bunch of folk round and want to do a big pot luck dish. 

Egyptian Kosheri - Vermicelli noodles and white basmati rice mixed with nutmeg and cinnamon on a stew of tomatoes, garlic, vinegar and chillies. Chick peas, fresh coriander and crispy fried onions to top it off and a freshly baked flatbread with garlic, herbs, olive oil and sesame seeds.

Sometimes the kitchen team bring in presents from their allotments or gardens, just now Nasturtiums are in full bloom and ripe for the pickings, if you haven't tasted them you really should, these are also lovely as cake decorations. 

Nasturtium, quinoa and couscous salad with roasted veg. Toasted almonds, pistachio and mixed seeds. Dressed with nasturtium, sumac and mint infused olive oil .

Day 4 VEGAN MOFO 2013 

Hands up who likes pizza? 

Yeah thought so....EVERYONE!!!!

Xmas came early in the kitchen and we got a brand new pizza oven, needless to say I've been obsessing about creating the perfect vegan pizza since and have tried out a bunch of different doughs/toppings/sauces and methods...

Just so happened that this batch of dough might be the recipe i'm going to use for them until i get the vegan sourdough starter ready, he's still only a baby and growing rapidly in our kitchen, his names Casper and he was made from rhubarb and rye flour...

So basically what you have here are a vegan-adult take on a kids classic.....Mini Pizza Pies, wether it was microwave ones, wee frozen ones or if you were fancy enough maybe one from a restaurant...i wasn't really allowed pizza as a kid but i do remember when Teenage mutant ninja turtles came out Fine Fare the local supermarket started doing sorta home made pizzas...they had really weird toppings but it didn't matter because the `ninja turtles ate them so i was too....thats why theres a sweet one here,that was one of my friends introduction to pizzas as he didn't like regular ones,anyway...heres the run down what they are...the finished list of the new pizza menu at MONO will be up and running in the next two weeks, just waiting on Casper and a couple of other kinks to iron out. 

I for one cant wait, going to have to put a pizza limit on myself a week,  fives okay right?
