Malotira is also known in Crete as mountain tea, even though it has no relation to tea itself. It is made of the leaves and flowers of the plant Sideritis (also known as ironwort). The name in Greek also means iron and in ancient Greece it was used as a cure for traumas from iron objects. Young soldiers used to drink it before battles, to increase their strength. The word malotira means to extract a bad thing, which shows how well known this plant has been for its valuable properties.
While regular black tea is rich in polyphenols, that tannic profile lends a smoky, more pungent and bitter profile to its flavor. Malotira tea on the other hand is different: the lower ratio of tannins, the lack of caffeine and the iris-like ingredients make for a light, ethereal and innocent woody aroma that will remind you of the wild Greek hillsides. The infusion gains a honey-golden shade with a tinge of green. A drop of honey, especially Greek thyme honey, rich in herbal aromatic facets itself, enhances the flavor and heightens the experience.

Baked feta with rosemary & oregano
This is a fantastic recipe. Easy but really transforms the feta into something so different from what you expect!
Ingredients:
1 pound or 1/2 kg block Greek feta
Black and white sesame
Rosemary ( fresh or dried )
Oregano ( fresh or dried )
1 tablespoon sweet paprika
Extra virgin olive oil
Preheat oven to 400ºF ( 200 °C )
Place the block of feta in the middle of an baking dish.
Drizzle with the oil, add the rosemary, oregano, the black & white sesame and the paprika.
Bake for 20 minutes or until the cheese has softened and melted.
This dish is best served hot, warm, or room temperature.
The Feta Pie That Will Blow Your Mind
This recipe I have for you is a real treat, and most importantly, is really easy to make!
It is the Amazing Cheese Pie That WIll Blow Your Mind!
Ingredients:
Urbangrains Feta Cheese (the entire slab) One pack of fyllo Urbangrains pine honey Sesame seeds Urbangrains Extra Virgin Olive Oil for frying Preparation:
Step 1: Lay the fyllo on a clean, straight surface. Place Urbangrains feta cheese slab at the far right (or left, wherever it suits you) of the fyllo.
Step 2: Start rolling the feta slab on the fyllo, making sure it covers the feta, and “envelope” it so as you leave no loose ends
Step 3: In a frying pan, add half a cup of Urbangrains olive oil and heat to maximum. When the olive oil is ready, lower the temperature by two degrees, i.e if your hob has an index of 6, lower it to 4.
Add the pie to the frying pan and cook well from all sides. The cheese will soften, if not melt in the center but it won’t spill out.Fry until golden.
Step 4: When you think it is ready, remove from the pan and place it on a plate. Add Urbangrains pine honey top with sesame seeds – eat while hot!

Feta Cheese Nutrition: The Most Three Important Benefits
#feta cheese is traditionally produced in Greece from a combination of goat and sheep’s milk and has gained immense recognition to the world, not only due to its abundant tangy flavor, but also because of the health benefits it offers. As the world followed the trend, many cheese producers outside of Greece started to make varieties of feta-like cheeses, with some made from cow’s milk or a mixture of cow and goat’s milk. However, the true feta is a product of Greece and should contain at least 70 percent goat’s milk and the remaining 30 percent from sheep’s milk.
A variation of feta has been known since the ancient times, since the ages of Aristotle and Dioskouridis, both the world most known philosophers, talking about mixing milk from the leaves of a fig tree with goats milk and obtaining cheese. Others talked about making cheese by mixing fresh milk with lemon or vinegar, a practice still followed today in the villages of Greece and in the island of Crete.
How is feta produced
Feta is a soft white cheese with no outer layer as some cheese’s do. The real name of feta in Greek means “slice”, named after from the process of cutting the curd into pieces after fermentation. Feta cheese is stored in rectangular tins of 1 to 2 kilos, preserved in brine in barrels or tins of 25 to 50 kilos. It matures over a period of 2 months in the brine, and should be conserved in the fridge at 2º-5º Celsius. After the curdling is complete, the whey is removed and the curd is cut into large pieces and placed in molds to drain. Once fully drained it is salted and left to repose in low temperatures. It is then placed in barrels or tins which are filled with brine and is left to mature for no less than 60 days.

Unforgettable Tzatziki
Ingredients
3 cups Greek yogurt
1 English cucumber, seeded, finely grated and drained
2 cloves garlic, finely minced
1 teaspoon lemon zest plus 1 tablespoon fresh lemon juice
2 tablespoon fresh dill
1 tablespoon salt (for salting cucumbers)
½ tablespoon black pepper grinds
1. Peel cucumbers and dice. Put them in a colander and sprinkle with the tablespoon of salt (draws water out). Cover with a plate and sit something heavy on top. Let sit for 30 minute Drain well and wipe dry.
2. In food processor or blender, add cucumbers, garlic, lemon juice, dill and a few grinds of black pepper. Process until well blended, then stir into yogurt. Taste before adding any extra salt, then salt if needed. Place in refrigerator for at least two hours before serving so flavors can blend.
4. For some extra flavor, add some olive oil and some coarsely chopped fresh mint.
Serve with brushed pita and some olive oil.
The Most Epic Greek Salad
Ingredients
1 cucumber, unpeeled, seeded, and sliced 1/4-inch thick
2 tomatoes, sliced
1 red bell pepper, large-diced
1 yellow bell pepper, large-diced
1/2 red onion, sliced in half-rounds
1/2 pound feta cheese, 1/2-inch diced (not crumbled)
1/2 cup calamata olives, pitted
1 tbsp capers, drained (or rinsed if packed in salt)
a generous pinch of dried oregano
6 tbsp extra virgin olive oil
3 tablespoons balsamic vinegar
sea salt
Black pepper
Combine vegetables and olives in a large bowl. Rest sliced feta on the top of salad. Combine oil, vinegar, and oregano in a small plastic container with a lid. Shake vigorously to combine oil and vinegar and pour over salad and cheese. Season with salt and pepper and let the salad marinate until ready to serve. Serve
Γιατί ξεκινήσαμε τη MonthlyFlavors;
Νομίζω είναι πολλές οι φορές που έχουμε γευθεί κάποιο παραδοσιακό ή και λιγότερο παραδοσιακό προϊόν του τόπου και το βρήκαμε εξαίσιο. Όχι απαραίτητα γιατί είμαστε συναισθηματικά δεμένοι με γεύσεις του τόπου αλλά γιατί όντως υπάρχουν προϊόντα που είναι απλά εξαίσια.
Η αξία της Μεσογειακής διατροφής
Μεσογειακή διατροφή: η διατροφή των παππούδων μας που χαρίζει ισορροπημένες γεύσεις, μακροβιότητα και καλή ζωή!
Τι είναι η -διάσημη πλέον- «Μεσογειακή διατροφή»; Είναι άλλη μια μόδα της γαστρονομίας, μια διατροφική τάση που έτυχε δημοσιότητας και προβολής και σε λίγα χρόνια θα ξεχαστεί χάρη μιας νέας γαστρονομικής μόδας, μιας νέας διατροφικής τάσης;
Η απάντηση είναι όχι. Γιατί η Μεσογειακή διατροφή δεν είναι η «τυχαία ανακάλυψη» κάποιου διάσημου διαιτολόγου: είναι πάνω από όλα μια κουλτούρα, μια άυλη πολιτιστική κληρονομιά που «συνδέει» τις χώρες της Μεσογείου θάλασσας εδώ και πολλές γενιές και η οποία αναγνωρίστηκε πρόσφατα από την UNESCO.
Ο λόγος βεβαίως δεν είναι απλώς συναισθηματικός ή πολιτιστικός: τα πλεονεκτήματα της μεσογειακής διατροφής για την υγεία είναι τεράστια και αναγνωρισμένα από την παγκόσμια επιστημονική κοινότητα. Μακροβιότητα, προστασία από τα καρδιαγγειακά νοσήματα, προστασία από τον ζαχαρώδη διαβήτη, από διάφορες μορφές καρκίνου (στομάχου, παχέος εντέρου, μαστού, ουροποιητικού κ.ά.), προστασία ακόμα και από το πάρκινσον και το αλτσχάιμερ, είναι κάποια από τα σημαντικά οφέλη της μεσογειακής διατροφής, όπως προκύπτουν από πλήθος επιστημονικών ερευνών.
Τι περιλαμβάνει η Μεσογειακή διατροφή
Στην βάση της πυραμίδας της μεσογειακής διατροφής βρίσκονται τα φρούτα και τα λαχανικά, το ελαιόλαδο και τα δημητριακά ολικής άλεσης: όλα τα παραπάνω δεν πρέπει να λείπουν από κανένα γεύμα, όλες τις μέρες της εβδομάδας. Σε καθημερινή κατανάλωση είναι και το κρασί (με μέτρο!) τα γαλακτοκομικά προϊόντα, οι ελιές, οι ξηροί καρποί, τα βότανα. Ανεβαίνοντας σκαλοπάτι στην πυραμίδα φτάνουμε στο άσπρο κρέας, τα ψάρια και τα θαλασσινά, τα όσπρια και τα αυγά. Και τέλος στην κορυφή, βρίσκεται το κόκκινο κρέας, οι πατάτες και τα γλυκά.
Με λίγα λόγια, οι άνθρωποι της Μεσογείου διαμόρφωσαν μια διατροφή με βάση αυτά που τους χάριζε άφθονα η γη τους στο πλαίσιο του ζεστού μεσογειακού κλίματος: φρούτα και λαχανικά, παρθένο ελαιόλαδο, κρασί, γαλακτοκομικά προϊόντα και όσπρια. Προϊόντα πλούσια σε βιταμίνες, ιχνοστοιχεία και φυτικές ίνες, κι επίσης πλούσια σε «καλά» μονοακόρεστα και πολυακόρεστα λιπαρά και, από την άλλη, φτωχά σε κορεσμένα λιπαρά οξέα και χοληστερόλη.
Για εμάς, την ομάδα του Monthly Flavors, πάνω από όλα μεσογειακή διατροφή σημαίνει μια πεντανόστιμη κουζίνα .
