Nothing like a good roast with gravy, potatoes and carrots! One of my favorite meals to cook.
My kitchen has been busy tonight!!! Sorry I don't have any progress pics, but sometimes I just get so involved in cooking I forget. I made enchiladas for this weekend and tortellini spinach and mushroom soup. If you want either of the recipes just let me know.
So last night, I made Chris and I a creamy veggie noodle venison pasta. I sautéed half an onion and a bell pepper, added minced garlic and half a can of rotel. Once this has cooked for about 5 minutes, I added about a cup and a half of chicken broth and my diced up venison sausage. While this is on a low simmer, I brought my veggie noodles to a boil. The noodles are cooked to al dente and then added to the sausage mix. I add garlic salt, pepper and Cajun seasoning to my mix. Once that is thoroughly mixed, I add my spinach and let it wilt. Then add half of the goat cheese and stir. This will add a nice creamy consistency. (If your mix is too thin, let it simmer a little longer before you add the goat cheese) Enjoy!

Last night Chris and I had Garlic Chicken, Squash casserole, a green giant steamers (best side since sliced bread) and a spinach salad.
For my Chicken, I marinated it in some spicy pickle juice for an hour. Overnight is even better. I know it sounds weird, but it makes it so tender and flavorful...and no it doesn’t taste like a pickle. Then i left it in the ziplock bag and pounded them out until they were about 1/2″ to 3/4″ thick. I trimmed all the fat off and then seasoned them with my go to ingredients: garlic salt, Italian Seasoning, Pepper and Cayenne. (Skip the Cayenne if you don’t like spice. Most of my stuff is pretty spicy)
Pre- heat your oven to 350 degrees. Once the chicken is nicely seasoned, I use about a tablespoon and a half of olive oil in my heated pan. If you have large chicken breast, you may want to use two pans, Sear on each side to a nice golden brown. Typically on medium/high heat for about 4 minutes.
Put your Chicken in the oven for 10 minutes. When the chicken is done, use your kitchen thermometer and be sure it is over 165 degrees in the center. (If you don’t have a kitchen thermometer...get one. They are amazing, and keep you from getting salmonella) If it isn’t there yet, bake for another 5 minutes, or in small increments until it is over 165. Let your chicken rest for 5 minutes and enjoy!
Well, Chris and I are having Brunch today. We slept in a little late. It’s has been one roller coaster of a weekend. This morning I made us some simple breakfast tacos. His are flour tortillas with egg, sausage and cheese and one with ham. Mine are egg and ham on corn tortillas. Of course with a side of coffee.

So this was my first try at Royal Icing. It's a little messy, and I need to work on the consistency. Overall I really enjoyed the experience. I need to purchase more piping tips and flood bottles though. I only had one piping tip and two flood bottles, so my day consisted of a lot of washing and switching out colors.
