Okay, so it’s the day before Easter Sunday… and these past few weeks have been pretty intense as far as my schedule and to-do list goes. So when it came to coming up with my Easter Sunday brunch contribution the overwhelming plethora of fresh organic carrots that have been filling up our vegetable draw inspired me to use them to create something truly delicious. Enter stage left, delicious Delightful Coconut Ginger Carrot Cake!
Influenced by our ongoing quest for healthy living and eating I was inspired to create this healthier carrot cake option that will leave my family feeling both satisfied and delighted, without the guilt of heavy treats. I can proudly say that this recipe was created using fresh organic and gluten free ingredients, cleverly combined to create one scrumptious dessert. Take a gander, you might get inspired to do the same.
Note: if you simply cannot imagine giving up the gluten, you can use organic unbleached all-purpose flour in place of the gluten-free flour used in this recipe.
Ingredients
Let me start off by saying that low-fat doesn’t makes something automatically healthy for you, nor does it make a recipe ‘clean’. My recipe however, is both healthy and clean, and doesn’t contain any ‘low-fat’ labeled products. What it does contain are fresh organic ingredients, gluten free flour, a healthier sugar option, and of course love (which makes everything taste better).
Cake Makings:
1 ½ cups organic gluten-free flour
1 ½ tsp baking powder
½ tsp baking soda
1 ½ tsp ground cinnamon
½ tsp ground nutmeg
1 tbsp chopped candied ginger
¼ tsp salt
1 tbsp fresh grated ginger
1 tbsp coconut oil
1 large egg, room temperature
2 tsp vanilla extract
½ cup organic coconut sugar
¼ organic plain Greek yogurt
1/3 cup 2% milk
2 cups freshly grated carrots, packed (about 4 medium)
½ cup chopped toasted walnuts, toast on 350°F for 5-8 minutes and cooled
½ cup shredded unsweetened coconut
Cream Cheese Frosting Makings:
2 (8 ounce) packages organic cream cheese, softened
2 cup sifted confectioners’ sugar
1/2 cup butter, softened
2 tsp vanilla extract
1 cup of toasted shredded unsweetened coconut (for topping)
Lets Get Started…
Directions
Preheat oven to 350° F, and coat a 9×13 baking pan with nonstick cooking spray and set aside.
To prepare the cake,
Mixed together the dry ingredients (flour, baking powder, baking soda, cinnamon, nutmeg, chopped candied ginger, and salt) with a whisk and set aside.
Fresh grated ginger, ready to add to the wet ingredients.
Then, mix together wet ingredients in a stand mixer, excluding the milk..
Wash and peel fresh ginger, then use a microplane grater to grate one heaping tablespoon of ginger. In an electric mixer using the whisk attachment, whisk together the fresh ginger, coconut oil, egg, and vanilla.
Then add in the Greek yogurt and coconut sugar, and mix on medium until smooth.
Then add in flour mixture and milk in alternating amounts.
Be careful to not over mix the batter.
Next add the flour mixture and milk into the dry ingredients, alternating between the two – starting and ending with flour (making sure not to over mix the batter).
Shredded carrots.
Chopping walnuts.
Fold shredded carrots, coconut, and toasted walnuts into the batter.
Wash and peel approximately 4 medium carrots to measure two packed cups of fresh shredded carrots. Chop walnuts and toast in the oven at 350°F for about 6-8 minutes. Then fold carrots, nuts, and shredded coconut into the batter by hand using a rubber spatula.
Spread the batter into the prepared pan, and bake at 350°F for 30 minutes or until a toothpick can be inserted into the center and come out clean.
Allow the cake to cool in the pan for at least 10 minutes before turning it out onto a wire cooling rack. Cool completely to room temperature before frosting.
To prepare the frosting,
Cream together the cream cheese and butter until smooth. Then mix in the vanilla, and gradually add in sifted confectioner’s sugar, until frosting is nice and creamy.
Toast the unsweetened coconut until golden-brown, and set aside to cool. Spread frosting on the cooled cake using an offset spatula . Then sprinkle the toasted coconut on top, and wah-la! You’re done!

The weather has been hot, the sky has been clear blue nearly everyday, and while it’s quite beautiful, we’re once again in the midst of a drought. But we’re not here to dwell on the negative.

Last weekend my boyfriend and I made our way down the Californian coast for a beautiful spring wedding in Carlsbad, and the next morning met friends for breakfast in La Jolla at a restaurant that overlooked the beautiful Pacific and Children’s Cove Beach. I cherish the moments we are able to spend with those we care about simply enjoying each others company, delicious food, and beautiful scenery. Sharing stories and laughs over pancakes and breakfast burritos.
After our meal, we made our way across the street for a little walk and watched the seals enjoying their very lazy Sunday on the beach, sprawled out without a care in the world.
The day was bright, vivid, and stunning… and another reminder of those all-important moments we need to take to recharge our minds and our souls.
Those moments that remind us that life is so much more than getting from point A to point B, or the things we can accumulate. Those moments that give life deep meaning and a general sense of well-being.
There are so many beautiful things to experience, and I am so ready to experience all the beauty that I can. I’ve learned over the years how important it is to remember that we each hold the keys to our own freedom and happiness; and that in order to use that key we have to slow down, stop and take it all in. Take in that ocean breeze, or those blooming flowers, or that freshly fallen snow. Take in the joy our loved ones bring to our lives, and be present in our present.
We should all strive to remember everyday how beautiful the world around us really is, and try to allow ourselves to really see that beauty. Our future selves will thank us.

What do you get when you mix: One hand-me-down vanity, two can’s of borrowed paint, a few brushes, a cheese and crackers platter, Thin Mint cookies, and a Gilmore Girls marathon? One kick-ass girl’s day in!
I’ve said it before and I’ll say it again, paint really DOES make all the difference! It took no time at all to transform this cute little hardwood vanity into a periwinkle treasure and only six items were needed.
Here’s the short list of necessities:
Paint brushes
Paint (color of your choosing) in Semi-gloss
Sandpaper (medium and fine grit)
Paper towels or a dust cloth
Drop cloth (trust me, you’ll need it), and
A screwdriver (to remove hardware)
A Simple Request
When my friend Kaitlin sent out a blanket request for paint from anybody who had some to spare, it only took a moment for me to respond with “What color did you have in mind?” Luckily, I had a few different shades of each color she was interested in. When she asked if I wanted to help out, it really didn’t take much thought about what my answer would be at all. So, with paint in hand I made the trek across town and spent the afternoon sipping on iced tea, eating cheese and crackers, and painting a vanity she got from her mom; all while watching Gilmore Girls on Netflix. I don’t know about you… but that’s a pretty awesome afternoon in my book.
For painting any hardwood piece of furniture the steps are simple, Clean-Sand-Clean-Paint-Let Dry. That’s it.
Variations only arise if you want to do something a little more… like distressing the piece, adding an interesting texture or finish, or the piece requires stripping or repair. Luckily, this piece didn’t require stripping or repairs of any kind; however, Kaitlin did want the vanity to feel aged, like it had been found in this color, rather than freshly painted. Great choice for this piece!
Step One: Clean and Sand
First step is to remove hardware using a screwdriver, then clean whatever piece you’re working on. Use lukewarm water with a bit of mild detergent and a sponge to clean off dirt and anything sticky. Then lightly go over the wood, sanding in the direction of the grain, with a medium grit piece of sandpaper. This is to remove any existing finishes that may keep paint from adhering to the wood. Lastly, using a fine grit of sandpaper go over the piece again, still working in the direction of the grain, to smooth out the surface.
Step Two: Clean and Paint
Next, dust off all particles of sanding residue using a clean cloth or damp paper towel. Using an all-purpose acrylic paint brush paint thin layers of paint onto the piece, also going in the direction of the grain in the wood. Allow the paint to dry, then add a second cover if desired.
Step Three: Add Accent Color
At this point we decided to add an accent color of paint inside of the drawer for an added element of surprise. Using an almost mint-green paint we painted the inside base of the drawer, along with the interior sides. Then allow the entire piece to dry for the length of one episode of Gilmore Girls… or about an hour, depending on how you tell time.
Step Four: Strategic Distressing
After the piece had time to dry we took a piece of fine girt sandpaper and lightly sanded around the edges of the piece where natural wear-and-tear would occur, near edges and corners. Lightly dust off the piece again, then ‘wah-la’… Your done!
Step Five: Dressing the Vanity
Nothing left to do but put things back into place.

Some people think that there is something inherently narcissistic about self-portraits; whether it’s in photo, in paint, in pencil, or any other medium. But I disagree. Self-portraits allow you to look at yourself a little more closely, to study your emotions, your body language, your features, and say something about what you see.
Of course photographic self-portraits are quite different than painted or drawn ones…. because while it’s still just a representation of yourself, what you get is you. In a painting or drawing things can become representational, surreal, expressive and less literal. A photo, unless mixed with digital drawings or overlaid with some other form of artwork, is a snapshot in time. Of who you are, or were in that moment.
These are my snapshots. Noelle at 28, in the warmth of the sun, an oversized sweater and my well-loved paint splattered art jeans, reading a travel magazine.
So, who am I? I’m a thinker. A curious adventurer… ready to see and experience the world. I’m a daydreamer, an artist, a romantic… in love with life and love and hope. I’m an optimist, but also a realist. I’m an outgoing-introvert, who can be single minded when I want to get something done. And I, not only, am not afraid of getting my hands dirty, I enjoy it.

One of many things I’m enjoying about graduate school is that it gives me the fantastic excuse to take the time to visit beautiful architecture, analyze every dwelt environment I step foot into, grow my art and design skills, and spend a day at a museum with my boyfriend… and get school credit for it all.

Filmmaking is an incredible art.
It’s a fantastic mix of artistic talents… writers, actors, cinematographers, directors, visual and practical effect artists, composers, song writers, costume designers, makeup artists, and so many more brilliant individuals. Films have the ability to transport us to distance worlds, far off lands, and other lifetimes. They give us a glimpse into the minds, lives, and experiences of characters both real and fictional; with the ability to both entertain us and give us insight into the human mind. They can stick with us for life, make us think, make us laugh, or make us cry… and some do all of the above. They are so versatile, and come in so many different genres, moods, tones, and lengths. I love movies.
Last night I had the amazing opportunity to support the Alchemical Brothers, Tom Hatfield and Ajala Bandele, in their filmmaking debut (which I’ve been mentioning all week), at the Hollywood Reel Independent Film Festival. Their screening, of which, was sold out then given an encore screening at the festival, which had an equally great turnout.
Their movie, OMG… We’re in a Horror Movie is a comedic satire of the horror movie genre, in which six friends and one crazy ex-girlfriend get transported into a horror movie. What’s different about this take on horror-satire is that the characters are fully aware of their unfortunate predicament, strive to find their role in the movie, and fight to be the one who makes it out of it alive. It’s heavier on the comedy side, than the horror, though these first time feature filmmakers have already been accepted into two film festivals since completing the film fall of last year. Original screenplay by Tom Hatfield and Ajala Bandele, directed by Ajala Bandele, with an original score by Tyler David Gilbert, original songs written and preformed by Tom Hatfield, and produced on a shoe string budget… it was a team effort in the truest form.
