So this is what became of my eggplant... sliced it, egged it, tossed it in some almond flour and parmesan and fried it up. Then I chopped up some left over Turkey meatballs and cooked it all quesadilla style w some sauce and mozz. Sooo good!! I have to say I feel like I'm in full garden failure.My backyard is just a hot mess of weeds, herbs and every insect imaginable. Happens this time every year. No matter how promising things start out as soon as august hits mother nature kicks my ass. Serious props to all gardeners out there that maintain beautiful gardens, your dedication awes me. Recovering today from quite the weekend. Crossed that 30 mark more than a few years ago and my resiliency to alcohol has taken a serious nose dive.
