Nachos - red corn tortilla chips with seasoned black beans, sautéed onions, daiya jalapeño cheese, shredded lettuce, fresh coriander, tofutti sour cream, green salsa, and probably something else I’m forgetting 😂

bbq jackfruit nachos ⚡️ I can’t believe I haven’t played with jackfruit sooner.. it used to scare me, lol but it’s so easy! and I love how nicely it soaks up spices I’m beyond thrilled there’s leftovers… 😼 have you played with jackfruit? I know many of you have… you’re braver than me 🙃 for the rest of you who have been hesitant like me.. here go play ….. bbq jackfruit recipe ingredients: 1 can green, young jackfruit in water or brine ½ small onion, diced ¼ cup vegetable broth, for cooking 1 tablespoon chili powder 1 tablespoon brown sugar ½ teaspoon cumin ½ teaspoon garlic powder ¼ teaspoon smoke salt (optional) ¼ teaspoon cayenne pepper ½ cup barbeque sauce ¼ cup vegetable broth ….. heat veggie broth in a large nonstick skillet or pot over medium heat. Add onion and sauté for about 5 minutes. drain and rinse the jackfruit in a strainer mix spices together in a medium bowl then add jackfruit and toss to coat next, add seasoned jackfruit to onions and sauté for 5 minutes whisk the barbeque sauce and veggie broth together and add to jackfruit mix cover and simmer for about 20 minutes then shred with a couple of forks serve as you wish
