Pumpkin Choco-Chip Bars
I cant believe its already late November and this is my first pumpkin recipe of the season! I made a similar version last year, inspired by these delicious bars on the amazing Ambitious Kitchen blog - changed a few things to make it a bit more of my own. These were a hit at a get together I went to last night, and can be served as a healthy dessert, or even enjoyed with a cup of morning coffee. Easy, healthy, good-for-you. NOURISH.
WHAT YOU NEED:
2 1/2 cups oat flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 1/4 teaspoon cinnamon 1/8 teaspoon nutmeg 1 cup canned pumpkin (not pumpkin pie mix) 2 teaspoons pure vanilla extract 1/2 cup +1 tbsp virgin coconut oil (or you can sub applesauce *see note) 1/2 cup organic turbinado sugar 1/3 cup vegan chocolate chips, plus extra for sprinkling on top
TO MAKE:
Preheat oven to 350 degrees F. Grease 8x11 or 9 inch baking pan with coconut oil. In medium bowl, add oat flour, baking powder, baking soda, salt and spices; set aside. In a separate large bowl, whisk together pumpkin, brown sugar, vanilla extract, oil, until the consistency is smooth and creamy. Slowly add in oat flour mixture and mix until just combined. Gently fold in choco chips. Pour batter into prepared pan and sprinkle extra chips on top. Bake for 20-25 minutes or until knife inserted into center comes out clean. Cool 10 minutes on wire rack, and enjoy!
*note: if using applesauce for an even healthier version, use 1/2 cup applesauce in addition to 1tbsp coconut oil
Strawberry Oat Bars with Chia Seed Jam
I read a ton of food blogs, and I am always looking for delicious, healthy, easy snacks to make to be able to take on the go, and pack in my fiance's lunch :) I am obsessed with oats, and found an incredible recipe on Oh She Glows (one my my FAVORITE blogs to read - a must visit!) for Raspberry Oat Bars that caught my eye immediately. I didn't have raspberries, so I used frozen strawberries, and also changed a few more ingredients due to what I had on hand at home. These are a new favorite of mine and are also fiance-approved!
STRAWBERRY OAT BARS WITH CHIA SEED JAM
Ingredients: Strawberry Chia Seed Jam 2.5 - 3 cups frozen or fresh strawberries 1-2 tablespoons agave 2 tablespoons chia seeds 1/2 teaspoon pure vanilla extract Oat Squares 1 chia egg (1 tablespoon chia seeds + 4 tablespoons water) 1/3 cup virgin coconut oil, melted 1/4 cup agave 2 tablespoons brown rice syrup 1 teaspoon pure vanilla extract 2 1/2 cups rolled oats 1 cup rolled oats, ground into a flour 1/2 teaspoon baking soda 1/2 teaspoon fine grain sea salt Directions: 1. Preheat oven to 350F and line an 8-inch square pan with parchment paper. 2. For the jam: In a medium pot, stir together the strawberries, agave, and chia seeds until combined. Bring to a low boil and reduce heat to medium. Simmer, uncovered, for about 10-15 minutes, stirring frequently, until the berries break down and the mixture thickens slightly. Remove from heat and stir in the vanilla. Transfer the mixture to a bowl and into the freezer for about 10-15 minutes, until cool. 3. For the oat squares: In a small bowl, mix together the chia seeds and water. Set aside for about 5 minutes until thickened. 4. In a large bowl, stir together the melted oil, agave, brown rice syrup, and vanilla. When the chia egg has thickened, stir that in too. 5. One by one, stir in the rolled oats, oat flour, baking soda, and salt until the mixture comes together. It will be quite sticky, but this is normal. 6. Spoon 2/3 of the oat mixture into the prepared pan. Begin to press it down with a spoon or using your hands to spread it out evenly. 7. When the chia jam has thickened and cooled, pour all of it on top of the oat mixture and spread it out evenly. Take the remaining 1/3 of the oat dough and crumble it evenly on top of the chia jam. 8. Bake for 25-30 minutes, uncovered, until the topping is lightly golden. Remove from oven and let cool. Slice into squares and ENJOY!. Perfect on the go healthy snack, and are also delicious warmed up and topped with nut butter!
