CAULIFLOWER CRUST PIZZA WITH PESTO By @FoodByMaria
Recipe: 5 cups chopped cauliflower (about 1 medium head) 2 chia eggs (2 tbsp chia, 5 tbsp warm water), or ½ cup egg whites 3 tbsp. grated vegan parmesan cheese ¼ cup parsely ½ tsp. black pepper ½ tsp. salt Topping ½ cup pesto 1 avocado rocket sesame seeds nutritional yeast pine nuts finely chopped red beets (raw) radishes - use as much or as little of these topping ingredients as you like! experiment, and use what you know you like! INSTRUCTIONS 1. Preheat oven to 400 degrees. 2. Line a baking sheet with parchment paper. 3. Steam cauliflower (chopped), for 10 minutes. 4. Once steamed, set aside, and cool. 5. Make your chia eggs, combine both ingredients, and let it sit for 5 minutes. 6. Now add cauliflower to a food processor, and pulse, in batches if needed till you reach a course, 7. “wet” bread crumb like consistency. 8. Now add the cauliflower to a large bowl, and add the remaining crust ingredients. Mix thoroughly. 9. Now transfer the mixture onto the parchment paper and begin to form a crush using your hards. The crust should be about ¼inch thick, but do what you like!! 10. Bake until brown and golden should be about 35 minutes. Enjoy! #LetsCookVegan

YOU HAVE BEEN CHALLENGED!!!
So, I know December can be a rough time to stick to your workout plan, so this month I am lowering the minutes so you have less of an opportunity to talk yourself out of it.
You are challenged to workout as many days as you can for at least 30 minutes!
This will start on December 6th, which will give us 4 full weeks.
Please keep in mind this is a healthy competition to stay motivated throughout the year with working out. Please do not try and do more than your body is capable of doing, just to win. Stay comfortable, and be healthy about it.
Each week you will submit to me the days that you have worked out. You will let me know how you achieved your 30 or more minutes for which particular day of the week.
I will then post an ongoing ranking for those participating showing how many days of working out have been completed.
THE TOP 5-10 (DEPENDING ON THE AMOUNT OF PARTICIPANTS) WILL BE ENTERED IN A DRAWING TO WIN A PRIZE!! MOTIVATION MOTIVATION!! :)
In December working out a minimum of 30 minutes within a day will qualify you for marking off a day for working out.
I will NOT be counting multiple workouts within a day, but just the fact that you worked out on a day.
However, you can combine workout times to equal 30 minutes, for example if you did a short 10 minute workout in the morning, and another 20 minute at the end of the day. Either way to qualify for a day to be marked of a workout(s) of (minimum) 30 minutes needs to have been done.
How Will This Be Tracked:
This will purely be on the honor system. So please no cheating, and don’t ruin this for others by lying.
I will ask that Sunday-Saturday you keep track of your own workouts.
At the end of Saturday/between the start of the next Sunday you will then message me or *e-mail me your weekly results so that I can mark them down.
*I have had a created e-mail for almost a year now specifically for this challenge that you will be given the information when it’s time to turn in week ones tracking.
You need to have specifics for each day, just so I know how you achieved your 30 minutes.
Example:
12/6 Tuesday - 30 minutes walking
12/8 Thursday- 15 minutes morning walk and 30 minutes at the gym
Last months challenge was a little more interactive and I want to continue on with this so that it possibly helps you become more accountable with working out.
I will provide you with a December Calendar (after sign up closes) that has numbers to color in. I don’t care if you color them in via the computer or print it out and hand color it in, but I will want you to color in each day you workout.
At the end of the month I want a picture of your calendar and you showing off your colored in accomplishments for the month. IF you don’t feel comfortable showing off your beautiful face, a picture of just the calendar will do as well.
THE GOAL IS NOT TO COLOR IT IN AT THE END, BUT MORE SO ALONG THE WAY TO ENCOURAGE YOURSELF.
