These gluten-free veggie fries are the perfect guilt-free treat to keep your New Year's resolutions on track. Packed with flavor and nutrition, they make a great addition to your snack or meal options.
Ingredients: 2 large sweet potatoes, cut into thin strips. 2 zucchinis, cut into thin strips. 2 carrots, cut into thin strips. 2 tablespoons olive oil. 1 teaspoon salt. 1/2 teaspoon black pepper. 1/2 teaspoon paprika. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/4 teaspoon cayenne pepper optional, for added heat.
Instructions: Turn on your oven and heat it up to 425F 220C. Put the sweet potato, zucchini, and carrot strips in a large bowl and mix them together. Pour olive oil over the vegetables and toss them around to cover them all. Add the paprika, garlic powder, onion powder, cayenne pepper if using, and salt to a different small bowl. Mix them together. Sprinkle the spice mix over the vegetables that have been coated, and then toss them again to make sure the seasoning is spread out evenly. Place the spiced vegetable fries in a single layer on a parchment-lined baking sheet. Place the fries in an oven that has already been heated. Bake for 25 to 30 minutes, or until they are golden and crispy. Flip them over halfway through the cooking time to make sure they brown evenly. Take them out of the oven and let them cool down a bit before you serve them. You can eat your gluten-free veggie fries as a healthy snack or side dish.
