Short brief
Vegetarian recipes mein shahi paneer paneer se banae jaane wali ek bahut popular dish hai. Aap ise kisi bhi tarah se banaa sakte hain aajkal bajar mein kafi tarah ke masale bhi available hai aur aap ise apne ghar ke khade masalon se bhi banaa sakte hain. To aaiae Aaj ham ise apne ghar ke khade masalon se banate hain jisse aapko ek naye swad ka Anubhav bhi hoga.
Main ingredient
250 gram fresh paneer
3 big size tomato puree
3 big size onion puree
Khade masale
2 whole red chilli
1 inch cinnamon
Two green cardamom
One black cardamom
3 whole black paper
½ tsp cumin seeds
other spices
Turmeric powder
½ tsp Red chilli flakes
½ Coriander powder
1 tsp Kasuri methi
2 tsp oil
Salt to taste
Recipe
Sabse pahle gas per ek kadhai rakhen. Ab kadhai mein rafali kate hue tomato and onion ko add Karen aur apne sabhi Khade masale aur adar spices Jo powder ki form mein hai unko add kar den. Kasuri methi ko sabse last mein add karne ke liye bacha ke rakhna hai.
Ab use kadhai mein aadha Cup Pani add karke usko dhakkan se dhak kar acche se pakane ke liye chhod Den lagbhag 10 se 15 minut ke liye hamen use pakane dena hai lekin Dhyan rakhna bich mein usko chalate bhi rahega nahin to jal bhi sakta hai. 15 minut ke bad apni kadhai ko gas per se utaar lijiye uske bad usmein aadat kab Thanda Pani mein karke thoda Thanda hone ke liye chhod de. Pake hue tamatar pyaj ko mixi jar ke andar add karke uski acche se ek fine Puri taiyar karne ab kadhai ko fir se gas per rakhen aap usmein apne according oil add kar sakte hain main refind oil ka use karti hun isliye aap refine bhi add kar sakte hain, oil ke garam hone ke bad apni gravy ko padhaai mein add Karen aur lagbhag 10 minut Tak usko fir se cook hone de. Gravy acche se Pak chuki hai ab usmein cream add kar sakte hain lagbhag ek bada chamcha cream usmein add kijiye. 5 min pakne ke baad usme apne according dudh add kre, apko kitna thick or liqudiy chiye us hisab se or 5 min or pakye. Ab paneer ke kate hue pieces gravy mai daale or uper ek chammach kasoori meethi ko dry roast karke uper se daale or apka sahi paneer tyar hai.
Aap usko roti, naan ke sath serve kar sakte h

Short Brief
Matar paneer is another variety of paneer dish. Everyone loves to have matar paneer. Here we have a very simple tadka recipe of matar paneer that all will like to cook in a different way... let's start to cook.
Main Ingredients
250g Fresh paneer cutted in cubes
250g peace(mater) fresh or safal as per your choice.
Ingredients for gravy
4 big onion pury
4 big tomato pury
2 Green chilli
1 inch ginger
Make pury to add all in a mixer.
Spices
1 bay leaf
2 red dry chilli
1 green cardamom
Above are khade masale…
2 tap oil
1/2 tsp cumin seed
1 pinch hing
1/2 tap turmeric powder
1/2 tsp coriander powder
1/2 tsp red chilli powder or flakes
Salt to taste
Two cup drinking water
Fresh green chopped coriander
Recipe
First wash all vegetables and paneer with good manners.
Put the cooker on low flame and pour the oil and let it warm. Now add khade masale and cumin seed to cracking and add hing. Now add washed peace into the cooker and fry for 3-4 min and let it brown a little bit. Some of them will give a roasted flavour in taste, add all spices and keep the flame low while adding and let it release the oil. Add onion and tomato pury together into it and give it a good mix. Let all cook upto 10 min and continue to give a mix two three times in between to avoid it burning, when it cooked well add water as per your requirement for gravy consistency thick or liquidy. Cover the lid and take one whistle then make the flame quit low for 5 min and at last take one whistle. Now leave it till its pressure is released by itself.
When it is done then open the lid and add the cutted paneer into it and give it a mix and just cover it for two min.
Garnish with chopped fresh green coriander.
Ready to serve…
Note:-
You can have it Puri, roti, Paratha.
This quantity is sufficient for 5 to 6 people..
You can add mango powder and garam masala into it if you want to make it extra spicy.
You can avoid onions if you want.

पनीर हरयाली
सामिग्री:- 200 ग्राम पनीर low fat 1 टमाटर चकोर टुकड़ो म कटा 1 प्याज चकोर टुकड़ो म कटा 1 मध्यम आकर की हरी शिमला मिर्च चकोर टुकड़ो मे कटीे 1 मध्यम आकर की लाल शिमला मिर्च चकोर टुकड़ो मे कटीे 50 ग्राम पालक के पत्ते थोड़े से कसूरी मेथी के पत्ते रोस्ट किये हुऍे थोडा सा हरा धनिया 1 चमच्च अदरक का पेस्ट 1 चमच्च नीबू का रस
मसाले:- ¼ चमच्च लाल मिर्च पाउडर ¼ चमच्च गरम मसाला 1 पिंच लॉन्ग पाउडर 1 पिंच दालचीनी पाउडर 1 पिंच काली इलायची पाउडर 1 चमच्च नीबू का रस नमक स्वादानुसार
विधि:-
पनीर को छोटे टुकड़ो मैं काट ले। उसे किसी बड़े बाउल के अंदर रख कर उसमे लाल मिर्च गरम मसाला नमक और नीम्बू का रस ये सब मिक्स करके 1 घंटे के लिए फ्रीज़र या फ्रीज़ मे मेरिनेट होने के लिए रख दे। 1 घंटे बाद आप बाकि की तैयारी शुरू करने के लिए पालक के पत्तो को धोकर उसके साथ रोस्ट हुए मेथी अदरक हरी मिर्च और बाकि बचे मसले और 1 चमच्च नीम्बू का रस भी डाले और mixi के अंदर अछे से एक सॉस के रूप मे तैयार करे और अब उस सॉस को सब्जी के टुकड़ो के साथ मैरीनेट हुए पनीर मे मिलायेे।अब प्रेहैक्टेड हुए ओवन के अंदर इसको 20 के लिए लाइट ब्राउन होने तक के लिए रखे ध्यान रखे की पनीर जयादा ब्राउन न हो जाये नहीं तो वो सवाद ठीक नहीं लगेगा अब उसको बाहर निकल कर सर्वे कर सकते है और अपने सभी फॅमिली मेम्बर के साथ सवाद का आंनद ले सकते है
नोट:-अपनी इच्छा अनुसार आप इसको धनिये के हरे पत्तो से भी गार्निश कर सकते है। ओवन को 20 min पहले प्रेहैक्टेड होने के लिए ओंन करदे। आप पनीर को ओवन मे कुक न करने की जगह उसको ग्रिल भी कर सकते है।

PUMPKIN
( SITAPHAL OR KADDU )
It is a kind of vegetable that people love to eat with two kinds sweet and salty and third one is with both combinations sweet and salty.
In INDIA everybody knows pumpkin as sitaphal or kardi and in out of India everyone knows the sitaphal as pumpkin.
So today we are going to make a very tasty dish that is very easy to cook. Let's go…
Main Ingredient
Pumpkin (sitaphal or kaddu)
( cutted in small cubes and remove all the seeds)
Spices
3 TSP mustard oil
½ TSP fenugreek seed
½ TSP cumin seed
1 Pinch salt
1/3 TSP turmeric powder
½ TSP coriander powder
½ TSP fennel seed or powder
½ TSP red chili powder
½ TSP amchoor powder
¼ TSP garam masala
Salt to taste...
Recipe
Put an iron kadai on flame with oil and warm it completely. After that low the flame and add fenugreek seeds, cumin seed let it crackling and add hing. Now add cutted pumpkin into kadai and start adding all spices beside garam masala and amchoor. Now give it a nice stair and mix all ingredients very well. Now turn your flame high for 2 min only.
After that turn your flame low again and cover a plate or lid over the kadai and let it cook for 10 min.
After that check if the pumpkin has turned soft or not and cook it next 5 to 8 min again to cover it.
Now remove the lid and mash the pumpkin well and add amchoor or garam masala and mix all well.
Ready to serve.
Note:-
Serve it with paratha or puri it will give an authentic taste as it is an Indian recipe. .
In iron kadai vegetables give a nice taste you can touch according to your choice.
If you want to have it sweet and salty the you can add 2 tsp sugar it will give a nice taste.
Add green chilli or red dried chilli if you want more spicy.

Bottle Gourd (LOKI)
In the summer season most people want to have something light in their meal. So today we are cooking bottle gourds means Loki or ghiya and we will cook it in kadai not in a cooker and many people cook it in a cooker also. We should keep our stomach light in the night time mostly so if possible we can make this kind of vegetables for dinner. So let's start….
Main Ingredient
500g Bottle Gourd ( Cutted in pieces)
Spices
2 TSP mustard oil
½ TSP cumin seed
1 pinc hing
½ TSP red chilli flakes
½ TSP coriander powder
¼ TSP garam masala
¼ TSP anchor powder
Salt to taste
Recipe
First put a pan on flame with required oil and let it warm completely, after that low the flame and add cumin seed with hing.
Let it start cracking then add cutted bottle gourd (loki) and add all other spices, do not add amchoor or garam masala with. We will use them at last.
Now give it a well mix and cook it for 2 min on high flame and after that low the flame and cook it for next 10 min to cover with a lid.
Now remove the lid and give it a mix again and cover it for next 5 min or require time if needed.
Now add garam masala and amchoor powder and mix well. Ready to serve

It contains most of the vitamins C, B, K, A, E, IRON, POTASSIUM and MAGNESIUM as well.
It is very useful to have while we want to reduce weight.

MASALA ALOO
Sometimes we don't able to think what to cook for "meal" and sometimes we don't have much time to make "something delicious" so in that case I am giving you a super idea that everyone does like to have and probably and most probably kids like the dish and we might have it all time at home, "masala aloo" so let's start.
Main ingredient
500g potatoes cut in slices
(soak in water for 10 min.
Not so much big size)
Spices
3 TSP mustard oil
1 TSP cumin seeds
1 Pinch hing
½ TSP red chili flakes
½ TSP coriander powder
½ TSP turmeric
¼ TSP garam masala
½ Cup water
Salt to taste.
Chopped fresh coriander to garnish.
Recipe
First put a kadafi of iron on flame and add oil in kadai let it warm up completely and then off the flame start your spices expect red chilli now let it dry for few seconds now add soaked potato slices into masala. Now add red chilli over the potatoes and start mixing. Now on the flame and let it cook on high flame for 2 min and after that low the flame with added water and cover the kadai with a lid and cook it for next 10 min. Now remove the cover and give it a mix nicely and cover it again for next 10 min more. Now on check potatoes cooked well nicely if required then you can cook more 2 3 min. Now garnish with coriander.
Ready to serve.
Note:-
You can make it as spicy or mild as you like.
You can use your desired oil and kadai to cook but it tastes good in iron kadai or mustard oil.
Have it with puri or paratha.
