Happy (almost) St. Patrick's Day from The Pink Pig (literally)!
I love using maraschino cherries in recipes, but they often have terrible additives included. I was excited to find Cherry Man Maraschinos, which have none of the terrible preservatives you often find. I highly suggest using these the next time you make cherry lemonade!

It's almost Spring time, and nothing says "Spring" like fresh fruit! I am sharing my recipe for fresh fruit scones today. The ones above are Raspberry, but I often use Fredericksburg Peaches when they are in season. These are great to enjoy on slow Sunday mornings with a nice cup of coffee.
Fresh Fruit Jam Scones
6 cups all-purpose flour
1 1/4 cups sugar
1/4 cup baking powder
1/4 teaspoon salt
1 1/2 cups (3 sticks) chilled unsalted butter
1 1/2-2 cups buttermilk
1/2 cup peach or berry jam
3 fresh peaches sliced, peeled and pitted OR 8 ounces of berries
Preheat oven to 425F. In the bowl of a food processor, combine the flour, 1 cup of sugar, baking powder, and salt for 30 seconds. Cut the butter into 1/4 in. cubes and ad it to the flour mixture. Pulse about 15 times, until the butter -flour mixture is crumbly. With the processor running, slowly pour 1 1/2 cups of the buttermilk through the feed tube. Stop the processor as soon as all the milk has been added. If the dough has begun to stick together in a ball, remove it. If not, add more buttermilk, 1 tablespoon at a time, and pulse until the dough begins to clump up and form a ball. Place dough on a lightly floured surface. Use your hands to pat the dough into a 1/4-inch-thick rectangle, about 12 by 10 inches. Spread a thin layer of jam lengthwise over half the dough and arrange the peach slices (or berries) in a single layer on top of the jam. Fold the plain dough over the fruit to make a 12 by 5 inch rectangle with the peaches and jam folded inside. Cut the dough into 8 triangles and sprinkle with the remaining 1/4 cup sugar. Bake on an ungreased baking sheet for 10 to 15 minutes, until the scones are light golden brown. Serve warm or at room temperature.
I'm really anticipating the upcoming Summer months; gardening, and being able to enjoy breakfast outside. Above are some pictures from my garden last Summer, I can't wait to enjoy fresh Heirloom Tomatoes again!
