2014 Holiday Cookie Roundup + Peppermint Bark Troubleshooting
Holiday baking is one of my fondest childhood memories, every year my Grandma and I would spend hours in the kitchen creating all kinds of amazing treats, and testing new and old recipes. Today I live about a 6 hour drive from my Grandma so while we don't get to bake together too often anymore, it's still something I absolutely have to do during the holiday season and it's a tradition I can't wait to pass on when I have a family of my own. One of my all time most requested recipes is Peppermint Bark, which is so easy you don't need a recipe, but sometimes things can go wrong since chocolate is temperamental, below I will share a few of my Peppermint Bark disasters over the years and how to fix or avoid them!
First let's do the recipe roundup of the above treats!

Shortbread (No recipe I just do a basic 2 cups of flour, 1 cup of butter and 1/2 cup of sugar recipe and change it up a bit every so often. This year I used powdered sugar instead of granulated which gives it a more tender texture and added a touch of vanilla extract and almond extract, they came out beautifully).

Peppermint Bark
Okay so let's talk peppermint bark! It's really simple, you melt some chocolate and add crushed candy canes and peppermint extract if you like. I've made it every year for about 7 years I'd say and over the years have hit a few snags.
1. DO NOT mix peppermint extract into melted white chocolate chips, I haven't tried every brand but with Chipits brand at least, the peppermint extract will cause the white chocolate to seize up and turn into a hardened crumbly mess, one year I wasted 3 bags of white chocolate chips...never again! I skip peppermint extract all together now and just use a lot of crushed candy cane, I think it gives it a more subtle flavour anyway.
2. If you decide to do layers of chocolate, as I always do (dark on the bottom and white on top) be careful not to chill the bottom layer too long in the fridge before pouring on the next layer. If the bottom layer hardens too much, when you put the top layer on and chill them, they actually won't be able to stick together and you'll be left with just broken and separated pieces of chocolate. This year I forgot about that rule and when I started breaking my bark I noticed it was separating, I had flashbacks to years before of failed bark and decided there must be a way to fix it. I turned the oven on a really low setting 275 degrees and just popped the whole pan in until the chocolate was melted (but not the candy cane bits, about 10 minutes) then I let it cool on the counter for a while before popping it in the fridge and TA-DA my bark was fixed!! Christmas was saved, okay a bit dramatic but I was thrilled!

Hot Cocoa Bar + Homemade Marshmallow Recipe
With the Holiday Season in full swing, so many of us have entertaining on our minds. A really fun, simple, and interactive way to add to your event is with a Hot Cocoa Bar! I set mine up this past weekend for a Holiday/Housewarming party (that's right we are homeowners!! more on that soon).
We kept our Hot Cocoa Bar very simple but you can add as many elements as you like. Ours included hot cocoa kept warm in a carafe, Baileys to spike it with, homemade marshmallows (recipe below), white chocolate chips, crushed candy canes and chocolate wafer straws. We also found some to go cups with lids at our local grocery store which kept us from doing dishes (yay!).
Who doesn't love a cup of hot cocoa around the holidays? One way of really making it special is with homemade marshmallows, they are just so much better than store bought, people are always amazed that you made them yourself, and best yet, they are really easy! Here's my favourite recipe.
HOMEMADE MARSHMALLOWS:
(Recipe adapted from Butter's Famous Marshmallows)
1 cup water 3 envelopes unflavored gelatin 2 cups granulated sugar 1⁄2 cup light corn syrup 1⁄4 teaspoon salt 2 teaspoons pure vanilla extract Generous amount of icing sugar to coat the marshmallows, about 1 cup
YOU WILL NEED: (9- × 13-inch) baking pan, buttered
STEP 1 : In a stand mixer fitted with a whisk attachment, pour in 1⁄2 cup of the water and sprinkle with the gelatin. Set aside to allow the gelatin to absorb the water.
STEP 2 : In a medium saucepan over high heat, add the sugar, corn syrup, salt and remaining 1⁄2 cup of water. Bring to a rolling boil and continue to boil for 1 minute. Remove from the heat.
STEP 3 : Turn the mixer to low and mix the gelatin once, or twice to combine it with the water. Slowly add the hot sugar mixture, pouring it gently down the side of the bowl, and continue to mix on low. Be careful at this point because the sugar mixture is very hot.
STEP 4 : Turn the mixer to high and continue to whip for 10 to 12 minutes until the marshmallow batter almost triples in size and becomes very thick. Scrape down the sides of the bowl frequently to avoid the batter overflowing. Stop the mixer, add the vanilla, and then whip briefly to combine.
STEP 5 : Transfer the mixture to the prepared baking pan and use a spatula to spread it evenly in the pan. Work quickly, as the marshmallow becomes more difficult to work with as it sets.
STEP 6 : Grease a sheet of plastic wrap with butter and lay it across the top of the marshmallow. Press down firmly on the plastic wrap, to seal it smoothly and tightly against the mixture.
STEP 7 : Leave the marshmallow to set at room temperature for a minimum of 3 hours to overnight. The longer the better, as the marshmallow will be too sticky to cut if you try too soon.
STEP 8 : Sprinkle a work surface or cutting board with the icing sugar. Run a knife along the top edge of the pan to loosen the marshmallow slab. Invert the pan and flip the marshmallow out onto the counter or board. Scoop up handfuls of the icing sugar and rub all over the marshmallow slab.
STEP 9 : Use a large knife to cut the slab into 1- × 1-inch squares. Roll each of the freshly cut marshmallow squares in the remaining icing sugar to coat them completely.

imPRESS Press on Manicure
I tested out the new imPRESS press on manicure today from Broadway Nails and Influenster. First off let me just say that hot pink and zebra and long nails are not really my usual nail style but none the less I love how professional they look for literally minutes of application time. They are absolutely fool proof, just peel and stick and you're done and best yet, is that they come in a range of designs and lengths to suit anyone’s taste (whether you love zebra and sparkly or nude and subtle).
My main concern with them is just how they feel on the nail, which I remember from briefly trying out press ons in high school is to be expected, and I suppose something you just need to adjust to.
Overall I think it’s a good product and something I can see myself using once in a while for special occasions. I'm on a budget and I can't get my nails done as often as I'd love to, so for me this is a perfect option to have a quick and fun look for a party or event. I'm going to shop for a shorter style in either a super dark or pale nude shade (my personal favourites) for an upcoming wedding in August.

Mini Egg Easter Cookies
In celebration of Easter this weekend I decided to whip up some festive cookies packed with one of my favourite treats, Cadbury Mini Eggs!
I found a recipe for a cookie that stays soft, since I wanted them to still be chewy by the weekend. I used the Chewy Chocolate Chunk Cookie recipe from Sally's Baking Addiction and subbed in the mini eggs for chocolate chunks.
I sent a bunch of them to my guy's office today and he told me they were all demolished before lunch time, I think that's a good sign.

Mixing His and Hers Design Styles - Living Room Mood Board
My guy and I are moving in together this Fall which I'm so excited about, and I have been daydreaming a lot about how we should design the new space. I'm loving blues and greens currently, so I tried to throw in a few small accents of that while keeping most pieces neutral. He loves the look of floating shelves so I added a couple into this board, but I think we would probably do at least 3. It's a great way to display art and found objects, like this rusted metal letter G which represents both of our last names, and my vintage camera collection. We both like things to be very clean looking, but he tends to sway more towards modern design and I like things a bit more vintage/girly, so I hope we can meld the two looks together to something we both love.
First Adore Me Order Has Arrived
A couple weeks ago I made a post on proper bra fitting and my order from Adore Me and my order finally came in a couple of days ago so I'm going to give my honest review.
First off the items are beautiful and immediately I can tell that the quality is extremely high for the low price that I paid. I ordered the Cassandra Set and I'm really impressed with how nice it looks in real life.
I only have one real problem and that is that they sent me the wrong bra size. I actually didn't notice until after trying it on and taking off the tags because I thought the fit was okay and I never looked at the size. I ordered a 38I and they sent me a 38G, after trying it on again I think a 38H would be best because it's not quite laying flat against my chest and I have very minor spill over in it, I think the 38I would be a bit too big. I am going to contact customer service about the error and see if there's anything they can do.
Overall I am very pleased with the product, although a little disappointed in the error, I know mistakes can happen and I always like to give more than one chance when it comes to service. So in short I will be ordering again, the quality for price really can't be beat despite a couple of hiccups.

Adventures in Making Macarons
I decided to attempt what is considered one of the most temperamental treats, the French Macaron. I studied many sources, read the common tips and tricks, and finally settled on a basic beginners recipe and went for it.
My results were not spectacular, unfortunately most of them cracked but I was able to put together a few decent looking finished macarons. I filled them with a beautiful homemade lemon curd, which thankfully came together perfectly.
After reading this super helpful Macaron Troubleshooting Guide I believe my batter was too airy, as I was a little worried about over mixing, also my oven temperature is notoriously inconsistent. While I do have an in oven thermometer, the temperature keeps jumping up and down which makes baking such a delicate cookie difficult.
I'm really determined to perfect this recipe since the cost of making them at home is quite low and they are something very special and impressive to serve or give as a gift.
Next time I'll try deflating the batter a bit more and I'll also keep a very close eye on the oven temperature, and start it off at a lower heat.
Does anyone have any good or bad Macaron experiences to share or any tips I can use for next time?

Bra Fitting: What You Need To Know
Watch this video and find out how we have been measuring bra sizes wrong for so many years. Traditional charts fit me in a 40D which is entirely the wrong size, and part of why this is so wrong is that when I measure my breasts without leaning over as suggested in this video I am actually measuring 4 inches smaller, not to mention adding all these extra inches at the ribcage. Using this modern fitting method I fit in a 36HH UK sizing or 36L US. I know those sizes sound crazy but it's only because we have been made to believe over the years that anything over a D cup is huge, which is just inaccurate.
I usually shop at Change lingerie, as they carry a multitude of sizes and the staff are generally pretty knowledgable, but today decided to try out Adore Me, I have heard great things about them and they offer a discount on your first purchase as well as a VIP program. According to their bra fit calculator they don't have a cup size large enough for my measurements but since I'm just one inch off from their chart, I'm going to give a 38I a shot and see if it works for me, they have free exchanges and $6 returns so I'm not too worried about it.

Simple Home Accents
Here are a few ways in which I have decorated my apartment with simple accents.
One thing I love about my space is the large windows and windowsills so I’ve displayed some of my belongings on them, including my perfume bottles in the bathroom and vintage cameras in my living area.
I’m also loving the white on white of the orchids against the simple wall and these were a beautiful Valentine’s gift from my guy, let’s hope I can keep them alive for a while…I’m a notorious black thumb!
Oatmeal Banana Crumble Loaf
The one thing I really remember my Mom baking when I was a child was banana bread and she never used a recipe, she just kind of threw it all together and it always came out perfectly. Today I took inspiration from her and decided to grab my overripe bananas and just have some fun in the kitchen. Don't get me wrong, I'm not a total novice in the kitchen and I do have a general sense of quantities when it comes to baking but for the most part I just kind of felt it out as to what seemed right. It turned out great I think, very moist and chock full of banana flavour. So why not have some fun in the kitchen yourself? Grab some ingredients and experiment a bit, and if you aren't feeling risky today, you can try out my Oatmeal Banana Crumble Loaf for yourself. Oatmeal Banana Crumble Loaf
1/2 cup quick cooking oats
1.5 cups all purpose flour
1 tsp baking powder
1/2 tsp cinnamon
1/2 cup sugar
1/2 cup melted butter (salted)
1/2 cup milk (I used 1%)
3 ripe banans mashed
2 eggs beaten
1/2 tsp vanilla
Preheat your oven to 350 degrees F
I combined the dry ingredients first in a large bowl and then although the technical way to make a recipe would have you beat the wet ingredients separately, I am lazy and love one bowl recipes so I added the wet ingredients into the dry and just mixed it all up. It came out just fine! Pour into greased (I used cooking spray) 9x5x2.5 loaf pan and set aside while preparing the crumble topping.
Crumble Topping:
1/8 cup butter (again I used salted)
2 Tbsp sugar
3 Tbsp all purpose flour
3 Tbsp quick cooking oats
Blend all crumble ingredients together (using your clean hands is the best way) and pour evenly over top of batter and pop in the oven for 45 min. With a moist banana bread like this it's often hard to tell if it's cooked through, as a toothpick will not come out dry and you don't want it to. For me I just looked for golden edges and a firm top. My crumble topping was kind of pale in colour, so I broiled the top for a minute or two. Should serve 8 very generous slices, but I ate almost half of it myself on the first day…oops!
