it's been an excellent season for the chives this year, so ive been making korean veggie pancakes from the garden:

mince a summer squash or zucchini up into fine shreds, plus a bunch of chopped korean chives, 2-4 minced green cheongyang chilis, some shredded perilla leaves, (optional) chopped seafood like squid or shrimp and fish sauce, lightly salt, mix, and leave it for a few minutes

come back with ~ 1.5 cups Korean pancake mix (flour, potato starch, leaveners, and seasoning) and enough unsweetened seltzer to moisten everything. salt and pepper, fry a little piece up to check the seasoning. if you like it, fry up a big pancake in a generous amount of oil over medium low until the entire pancake is cooked through, then flip and brown the other side on medium (3-5 minutes)

you can serve it with a dipping sauce of soy sauce, black vinegar, and chili flake if you didn't season it heavily. enjoy!
