Love how Maurice (canonically?) is afraid of Gustavo.

I’m imagining it’s because on one of their first meetings, Maurice would NOT STOP insulting Peppino. (Potentially, Maurice keeps expecting Gustavo to agree.) At first Gus is politely arguing, like “nooo Peppino’s a good chef!” ^_^ “He’s strong, he took on an entire tower of baddies!” ^___^ But Maurice underestimates Gustavo’s politeness to be pacifism, or that he’s not going to call him out on being an asshole.

Eventually, Peppino steps away for something, and, Gus: Hey, Maurice :) if I hear you talk shit about Peppino one more time, I’m Going To Kill You™ :)

Either this would:

1. be enough. he shuts up entirely, simply leaves, or decides to brag about himself instead. The sight of a jolly, tiny man threatening to kill him with a smile is enough.

2. start a fight, and is terrified that Gustavo Could Actually Kill Him.

Either way: he’s learned. All of this mostly based on my personal experience of people “being scared” of someone who really just doesn’t put up with bullshit.
