There was a moment where Simone spotted Phoebe seeming off-thought but she figured it was going to be a common thing for the girl. After all, memory was a hard thing to recover - if one ever did. She still hoped for the newfound acquaintance that her memory would return eventually. Laughing with the girl, Simone shrugged it away, “Mine either, but he swore by the plate.” Glad that she could provide some sort of happy news for the blonde, she showed her around and smiled with pride when her crew were so welcoming. The tearful smile on Phoebe’s part warming the chef’s heart, just before the surprise from Paulie’s greet caused her to tuck a snicker into her shoulder. Paulie, pleased by Phoebe’s answer, took it upon himself to follow up, “Then I’ll be the first to tell one to ya. Mind you, my pride will be ruined if you don’t laugh at this. Everyone will put me in a corner for weeks! Alright, here goes nothing…” He wiggled as if preparing himself for a grand show, prompting Phoebe firstly, “What did the digital clock say to the grandfather clock?” Pausing a moment, he waited for an answer, before shouting with a deep chuckle, “Look grandpa, no hands!” After the laughs, or lack of them perhaps, died down, he nudged Phoebe in return, “Got any up your sleeve?”
“He sounds insane if he thinks that tastes good. I mean–I’m just having a hard time imagining that dish tasting good at all.” The woman said crossing her arms and shaking her head. Phoebe looked at Paulie curiously, wondering what the man was about to say. She tried not to snicker at his wiggling, it reminded her of a cat getting ready to pounce, or a dog excited to see its owner. When he spoke she started to smirk, lips curling and she opened her mouth “What?” She asked, and when he delivered the punchline she rolled her eyes and laughed. “Wow.” She said through her chuckle. “That was horrible.” She continued with a grin her blonde hair bouncing around her face as she laughed. “I have tons, Um—Why didn’t Miss Piggy get married?” She looked to Paulie wondering if he would guess it. “She was afraid of Kermit-ment”

“The fanciest meal someone’s said? Hmm, lemme see…” The brunette lifted her crystal gaze to the ceiling, eyes swimming back and forth as she recalled the many, many interviews she has had as a restaurant owner. “I think it would have to have been this guy about mm four years back? He came in and claimed his favorite dish was ‘pigeon with warm foie gras sorbet.’ I knew then and there he probably wasn’t the person I wanted on my team. Though it was his sour attitude that ultimately made my decision.” Tilting a shoulder, Simone smiled softer at the younger girl, “Mhm, if you want the job.” She was glad to hear the blonde could start whenever, since she’d be needing a hand as soon as possible around the restaurant. With everything on her plate, this was going to be a relief for the semi-workaholic. “Great! How abooout we’ll get your uniform ordered and shipped here by the end of this week, and you can start next Monday?” she checked with a kind crinkle at the corner of her cat-shaped eyes, opting now to encourage Phoebe with her. “Now I’ll actually show you around the restaurant, because the crew’s been dying to meet the new chef. I may have been putting in a good word already about you. I’m sorry in advance for the hugs. They’re all saps.” With a curl of her lips, she exited the office with the girl and began to lead her across the restaurant, pointing out the places and duties the chef would both travel to and perform. At last, she stopped in the kitchen and introduced Phoebe to the staff, who were quick to come forward and test her out with welcoming hugs. “Hey! Nice to meet you. Welcome to the team,” they said here and there but mostly in unison, cheerful for the congrats she received at joining. It was Paulie at last, Simone’s most trusted waiter and semi-manager, who finally came over and clasped the blonde’s shoulder with his hand, “Gotta just ask real quick. You like corny, lame jokes right? ‘Cause this place is infamous for that.”
Phoebe nodded, rather curious to see how far people would go, and most likely lie, to impress a potential employer. And it was in that moment that she had a small flash of a memory; her eyes glazed over for a second as she thought--a couple seconds later she snapped out of it and her smile reappeared. “What in the hell.” Phoebe said seriously before she busted out laughing at the idea of that plate. “That just---doesn’t sound good..at least in my mind.” She said. But shook away the thoughts. “I’d love the job though. I really would.” She said excitedly. Phoebe nodded enthusiastically. “I’d love that.” She said. But when she mentioned showing her around and that she had been hyping her up the blonde’s cheeks warmed and she squeaked. “Oh my. Well I guess im totally down!” She said, “And I love hugs so that works well.” She said standing up and following the woman out of the office. She made mental notes of each place, keeping it all right in her mind wouldn’t be a huge deal, but she wanted to impress Simone when she started. “Thanks guys.” She said with a tearful happy smile. She squeaked a bit at the slap on her back but then looked to Paulie and smiled large. “Yeah I really do.”

Sitting behind her desk, she welcomed the blonde to the chair opposite of hers. Simone was about the easiest person in interviews. She worked on a human-to-human tone, rather than an employer-to-potential employee one. She never saw the need to pretend herself higher and intimidating, and generally? It worked. Her crew were some of the best people, and she liked to think it was because of her casual yet still respectful manner. “Greystone, right? I knew someone who taught there, but he’s been retired now forever. Great school, and even greater location.” She listened further, internally marking down Phoebe’s answers. All of which promised well, and her humbleness was also greatly favorable. Though Simone had to wonder if she acted any differently before her accident, and if that personality would later surface. Still, she was someone who believed the best of others. The blush was looked over to spare a deeper shade, and she smiled warmly, “All I care about is your credit and how you present yourself, both of which have been a-okay so far, hun.” Pleased by the girl’s favorite dish, Simone admitted, “I’m so glad you didn’t say some overly fancy shmancy meal. You wouldn’t believe the things I hear in interviews. You’d swear these people googled ‘fanciest dishes ever’ before wandering in. My favorite dish happens to switch between a classic fish and chips annd Swiss steaks and egg noodle pasta. – Experimenting with food is fun, and definitely what a good chef does.” She sat back in her chair, thinking of more things to ask, but frankly - she had already made her decision before the interview had began, “So when can you start?”
Phoebe nodded enthusiastically, a bit excited that the woman before her knew Greystone. It wasn’t everyday that you could talk to someone who knew your school and professors. It made the blonde grin wide at the thought. “It really was such an amazing school, the teachers were fantastic, so much fun, they made learning easy.” She said shrugging. That was the easiest way to explain it. When a teacher made her learning fun she never forgot it. Then again it was hard to forget most cooking in Phoebe’s mind. she just loved making food for people. It was so odd to Phoebe, to be interviewing. She could feel it in her bones, she knew that this was odd for her, but she also felt as if it was totally normal. It honestly confused the girl more than she could explain. When your mind thought one way but your body felt another. “I’m glad to hear that then.” Phoebe said smiling brightly. Her eyebrows raised and she smiled more. “Can I ask? What’s the most ridiculous you’ve heard?” She asked. “I mean, I get why they’d say something fancy, they want to impress you but still....the idea of proving you can cook something simple and well known better than something fancy, in my mind at least, is more impressive.” she shrugged. She had settled into her chair a bit more when Simone spoke once more, and when she did the chef perked up, her whole body seemingly moving in a split second to one from relaxed to excitement. “Wait really?” She felt a smile sliding over her pale pink lips. “I can start whenever you need me to.”
