I love me a good guardian angel sheith AU but please consider:

AU in which Keith is a reaper assigned to escort Shiro’s soul when he dies, except he’s been hanging around for years because Shiro has a habit of being in near-death situations. Because of this, Keith has gotten to see Shiro at his best and at his worst, see his relationships with others, what a kind and incredible person he is despite the horrible things he’s been through. So when it’s time for Shiro to go, Keith can’t bring himself to take Shiro’s soul. He can’t take Shiro away from the people who love and care about him. He knows humans can’t live forever and that he’s delaying the inevitable, but he inadvertently becomes a sort of “guardian” for Shiro, doing exactly the opposite of what he’s meant to– keeping him alive.

(please keep in mind that I know literally nothing about the actual nature of reapers in literature and this is just a fun concept)
