CW: poultry Not a tremendously impressive photo, but executive dysfunction has been kicking my butt, so I've been on the lookout for labor- and time-saving tricks to keep me doing healthy stuff like actually eating. XD And I found a good one! 1) When I bake chicken thighs, I put them on top of a cooling rack on top of a cookie sheet. The little layer of air makes for more even cooking and also allows the juices and fats to collect underneath, so you don't get that gummy little glop of skin sitting in liquid. Crunchy skin is *mwah*! 2) Rendered fats collected beneath = insta-schmaltz! I put my asparagus in the cookie sheet under the chicken and it greased and seasoned itself, no extra dishes or rolling the veg in olive oil or whatnot. And chicken and veg were ready at exactly the same moment.
